Angel Pie

Absolutely amazing pie. My mother used to make this every 4th of July...and this one turned out even better than her's. I will totally be making this again soon. It's one of the few pies I've ever made that was eaten within hours of being served.

Glorious Sponge Cake

I made this with regular AP flour (i did sift it). I also don't have a bundt cake pan so I put it in a large bread loaf pan. It fit just fine an turned out spectacularly! Oh, I also replaced the lemon with vanilla because I have one son who does not like lemon flavored desserts. If you are separating the eggs and not very good at it, just be fearless. Pay attention and as soon as you think a yolk is broken just toss it into the yolk bowl. I was afraid because 2 out of my 6 egg yolks broke. There was even a little yolk in the egg whites. I scooped it out with a spoon and went on my way. The egg whites whipped light and fluffy just fine.

Easy Chicken Tetrazzini

I used this recipe as a basis for my own spin. I sauteed 2 cups of fresh mushrooms, 1/2 red onion, and 3 celery stalks all thinly sliced in 2 TBSP butter, made a classic bechamel sauce (4 cups), added 1/2 cup shredded cheese to my bechamel, mixed everything together and then topped with more shredded cheese and baked at 350 degrees for 25 minutes. I think a bechamel is fresher, more affordable and healthier than canned soups. I think 3 large chicken breasts provide more than enough meat, no need for 5.

Broccoli Chicken Casserole I

This was my all-time favorite meal when I was in high school. Whenever I came home from college I'd make my mother make it. Differences now? My mom used frozen broccoli. I buy my broccoli fresh and blanche it then shock it before using it in this dish. I sauteed my chicken instead of boiling it. That was a mistake. I recommend boiling the chicken because it will be more tender. I added a can of cream of chicken soup (because my 1 lb. of blanched broccoli had much more volume than frozen), and the 4 chicken breasts I used were huge. Because we like our casseroles a little creamier, I added 1/2 a can or about 1/2 cup of milk to the sauce mixture. Because there was canned mushroom soup in this recipe I added about 1 TBS rubbed dalmation sage and 1/4tsp cayenne pepper because these two seasonings really make canned mushroom soup more fancy and palatable. Last tip - Use Pepperidge farm stuffing for the topper. double it to 2 cuos, and drizzle one stick of melted butter over the top before baking. My bake time was 45 minutes instead of 30. Even then, it could probably have used an hour.

Baked Potato Soup I

I read a lot of the reviews here and many of them said the soup was too thick. I thought it was perfect but maybe that's because I used 1% milk instead of whole milk. I also used reduced fat sour cream because I can't tell the difference between that and regular so I might as well use low fat. Next time I make this I want to try it with pancetta instead of bacon. I thought 1 tsp. of salt was perfect, but I increased the amount of black pepper to 1 1/2 tsp. I also added 1 tsp. of dried parsley because this herb is so great with potatoes. I think this soup would lend itself extremely well to many different flavors, ranging from cumin to curry. I think I'm going to try a curried baked potato soup next!
