Red Beans and Rice

I had some red beans that needed to be used up, and I've heard a lot about beans and rice, so I thought I would give it a try. I forgot to soak the beans overnight, so I tried to quick soak them, but I didn't do it right. Oh well... I didn't have a ham hock, so I just left that out. I used smoked turkey sausage and it turned out great. The only thing that didn't work was the beans weren't as creamy as I would like, but I think if I soak them overnight and maybe cook them a bit longer, it'll turn out great. I'll definitely make this again!

Tuna Noodle Casserole from Scratch

I loved the idea of making this dish from scratch. It turned out amazing! I'm rating it a 4, however, mainly because I changed a few things because I thought the regular recipe looked a bit...bland. I mainly just added some dill, nutmeg, one chicken bullion cube, and crushed chili pepper flakes to the sauce. I also used butter-flavored crackers instead of bread crumbs to give it a little more flavor and bite. It turned out great. Next time I'll have to use a bit more cheese. I just eyeballed it, and it turned out a bit crunchy as opposed to cheesy. I might add some cheese to the sauce as well. Thank you for this recipe! I will make this again.

Pumpkin Smoothie

I cut it down to just one serving to fit in my Magic Bullet. I added a bit more brown sugar, as it didn't taste sweet enough the first time. Even after that it still needed something else. This definitely is a recipe that I'll tinker with until I get it to what I like. I also didn't freeze the pumpkin, rather I just added a few ice cubes.

Cod with Italian Crumb Topping

This was pretty good, and really the only reason I took off a star was because I used light mayo/lemon juice instead of the egg white (I was out of eggs!) I forgot to mix the oil with the bread crumbs, so I kinda sprinkled it on top. Next time I'll try mixing it and see if it holds together better. I also seasoned the fish with Old Bay and a dash of salt before putting everything on it. :)

Oven Roasted Red Potatoes

I thought this was great! My husband, who normally doesn't like potatoes, thought they tasted a lot like the oven fries I make, so that's a plus. The dehydrated onions in the soup mix did burn a little bit, but it wasn't bad enough for me to throw them out. I very rarely have 2 pounds of potatoes on hand, so I do eyeball the measurements. My hubby thought they needed a bit more salt, so this time I just sprinkled a tad bit over the potatoes before putting them in.

Janet's Rich Banana Bread

I lost my banana bread that I had been using, so I found this one. I only changed a few things, but nothing that would affect the recipe as written. First of all, I mashed the bananas with a back of a fork due to my husband not liking hunks of bananas in his bread. I also used light sour cream, as that's all I buy and all I had on hand. I also just used softened butter, as that's what I always do with baking recipes. The taste and the moistness were awesome! My only issue was that, even though I mashed the bananas, they still came out purple-looking. I think it's because I used 3 bananas that needed to be used, so perhaps there were too many bananas? Definitely will make this again. :D

Canned Tuna Loaf

I did this pretty close to how it was written. I didn't have any horseradish, so I omitted that, and I cooked it for 30 minutes but set the oven to 350. I left some water in the tuna, and that seemed to help keep it a little moist. I also didn't have any "soft" breadcrumbs, so I just used regular breadcrumbs and just eyeballed it. I think next time I make this, I'll double the recipe, as it was kind of skinny, and I prefer my loafs to be thicker. The cayenne gives it a little bit of a kick, that I'm not a huge fan of, but it's still pretty good.

Mouth-Watering Stuffed Mushrooms

I loved these! I did cut down the cream cheese to about 3/4ths of a package, as I only had 10 mushrooms. Also, I cut back on the cayenne pepper, as I can't stand things with too much kick. I did as others suggested and added some Italian breadcrumbs and melted butter to the top and it was wonderful as it gave it a bit more texture. Just wished I had more!

Asparagus and Mushroom Frittata

This was very delicious! I only changed a couple of things: I cut down on the olive oil to save some calories. I also used 7 eggs as 6 didn't look like it would be enough. I also added a pinch of garlic salt to the skillet when I added the mushrooms. I've made a frittata before and what I do is leave it uncovered on the stove top and cook it until the edges are beginning to set up. Then I put it in the oven for 10 minutes and it was perfect. Thanks for sharing this recipe. I will definitely have to make this again this summer.

Easy Mexican Casserole

Loved this recipe. Only changed a few things. Didn't use the green onions as we don't like them. Also added some taco seasoning to the meat (ground turkey as opposed to ground beef). To combat the not-so-crunchy chips, I just added some crushed up chips on top when serving. Also put some shredded lettuce on top as well. Will definitely make again!

Banana Nut Bread III

This tasted amazing. I opted not to use the nuts as my husband doesn't like them in the bread. I know it took longer than 45-60 minutes, but I didn't keep track after that. Sadly, because of that, I burned the outside a bit, but other than that it was delicious. Good way to use up bananas that don't make it into smoothies. :)

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I really love pretty much anything with mushrooms, so I was excited to find this recipe. I just made it for supper tonight and it was delicious. I followed the recipe exactly except for substituting the garlic and herb Boursin cheese. I also added some garlic to the mushrooms while they were cooking. My only complaint about the whole thing is that I wish the sauce was a bit thicker. Will cut down on the chicken broth next time and maybe add some more cheese of sometime. Will definitely make again.

Asparagus Parmesan

I loved eating the asparagus like this. Next time I'll probably use less oil as I had a lot left on the asparagus, even after draining them. Other than that, I loved it. Will definitely make these again.

Peach Blossom Fuzz

I never would have thought about putting honey or vanilla extract into a peach smoothie. I honestly just eyeballed most of the ingredients into my Magic Bullet. I used frozen peaches and didn't use any ice (I don't have an ice machine and we usually don't keep ice on hand). I also used vanilla yogurt instead of plain 'cause, again, that's what I had on hand. This will definitely make it onto my smoothie rotation. :)

Zucchini and Eggs

Very good. I love zucchini so I absolueltly loved this recipe. Only changed a couple of things: I only used half a zucchini and cut them into half-moons. Used 2 eggs. Added some garlic salt while cooking the zucchini, and I just scrambled everything together as it was easier in my small skillet.

Slow Cooker Pulled Pork

This was amazing! My husband loved it as well. Here's what I did different: Rubbed salt, pepper, and garlic salt on the tenderloin before I put it in the crock pot. I had to use 3 cans of soda to cover it really well, but I still had to turn it a couple of times. I cooked it for 5 hours, dumped the soda, shredded the pork, mixed it with some BBQ sauce (Famous Dave's) and then cooked it for another hour. Tasted wonderful! Will have to make this again!

Maple Salmon

This tasted almost like my teriyaki salmon which I make on occasion, but takes a lot less effort. Followed the recipe to the letter (just using light maple syrup to cut a bit on the calories) and they turned out perfect! Will definitely have to make this again some time!

Beef and Irish Stout Stew

I'm sure this is a great recipe, but I just had issues with it. I know I don't like Guinness, but I thought it would work enough so that I would like this stew. If I had some on hand, I would have added a can of beef broth and that might have helped. Also, since I was watching my month-old daughter, I accidentally burned the stew 2 different times, so that might have affected the flavor itself even though I got all the burned bits out. I may try this again, but not sure as my husband doesn't like stew. Also, I added about a pound of red potatoes 'cause I love potatoes in my stew. I only wish this had turned out for me.

Baked Buffalo Wings

I personally do not like buffalo wings, but my husband is a big fan. So, I decided that I would give these a try and see if he liked them just as much as the store bought ones. He sure liked these! I did change a few things based on other peoples reviews. I made sure I patted/squeezed the wings dry with a paper towel before I dredged them. I also baked them on a cooling rack above a baking sheet. One last tweak was that I baked them for 25 minutes on one side, flipped them and cooked them for another 25 minutes *then* I put the sauce on and baked them for an additional 5 minutes. Then I drizzled them with the leftover sauce I made. Only thing my husband would have liked was for them to be a bit more "saucy". Maybe I'll double dip them next time. Will definitely make these again!
