Quinoa Porridge

I am always looking for healthy meal options. I was excited when I came across this one because quinoa is a great alternative to many grains. I made this the first time exactly as the recipe stated. It was good but the nutty flavor was a bit overwhelming for me. So, the second time I used half vanilla soy milk and half almond milk. I also used 1 tablespoon of cinnamon instead of 1/4 tsp. I topped the porridge with some walnuts and raisins. It was just right! I make a full batch and divide it into 1 cup servings. I refrigerate the second serving and reheat it the next morning with a little added soy milk and it is great!

Fish in Foil

I think this is the best way I have ever eaten Tilapia! It was light and fresh with a hint of a kick. My kids loved it but did complain a little about the spiciness, but that didn't keep them from eating it all! I served the fish over rice and poured the baking juices over it all. Great and super easy!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I loved these muffins! Everyone in the house enjoyed them. They are a great alternative to processed sugar treats. Plus, I am always looking for a way to use overly ripe bananas in the kitchen. Oh, I did use fresh strawberries instead of frozen, still great!

Pumpkin Protein Cookies

I love these cookies! I make large batches, freeze them, and pull them out of the freezer as I want them. They are great to use as snacks throughout the day. I did modify the recipe based on others reviews. I didn't use splenda but instead 1/4 cup honey. I used 1 cup of pumpkin instead of 1/2 cup. I also used more cinnamon and opted out of the nutmeg (just don't care for it). I then spray a mini muffin pan and spoon the batter into the pan and bake them. 3 cookies equals roughly 1 normal cookie. This way I can snack on them easily throughout the day. My kids even enjoy them!

Orzo with Parmesan and Basil

I made this for my family on fathers day. Everyone raved about it and there were no leftovers! Obviously, if you don't like parmesan cheese it wouldn't be for you. It had a great amount of flavor but it wasn't over bearing either.

Balsamic Roasted Pork Loin

Slow Cooker Carolina BBQ

I made this when company came to visit and I got nothing but rave reviews! I only put half the amount of hot sauce that was suggested just because I was scared of overwhelming my guests. Next time I will use the full amount because the kick wasn't strong enough for me with only the half amount. The hardest part of this recipe is shredding the cut of meat. We had enough left overs for another full dinner later in the week. It reheated well too.

Chuck's Favorite Mac and Cheese

I loved this recipe. I followed it exactly as stated. I love the addition of the cottage cheese. It has a subtle yet sharp flavor, hard to describe. To make it a meal I brown a pound of ground beef in A1 sauce and add it to the macaroni and cheese before baking. We all loved it!

Avocado Feta Salsa

A fresh and light dip. Everyone ate this dip up so quickly I almost didn't get to try it for myself! Super easy prep. I followed the recipe except I used fresh cilantro instead of oregano. Will be making this again!

Cottage Cheese Roast

I am always on the lookout for vegetarian dinner ideas that are protein packed. I decided to try this one even though I was weary of how it would turn out. I followed the directions exactly except I used low fat cottage cheese. It looked horrible mixed up as I put it in the loaf pan. It smelled great as it was cooking and when pulled out of the oven looked exactly like meatloaf. I did not tell my kids that this wasn't my usual meatloaf recipe. Everyone at the table ate it up and more! They raved about how great it tasted and asked what I had done differently! The meatloaf was moist and there was no one flavor that stood out to over power the overall taste. I am so excited I found this recipe, thanks for sharing KittyAnn! This will be made again and again in our house!

White Cheese Chicken Lasagna

This takes some time to prepare but it is very worth it! The flavor was incredibly smooth and flavorful! I loved the fact that the chicken was just the right amount and didn't overpower the lasagna. I will be making this again!

Garbanzo Tomato Pasta Soup

I thought this soup had excellent flavor! I followed the heed of other ratings and added oregano and simmered longer than an hour. It is light but the garbanzo beans pack in the protein. It reheats really well too.

This soup is fantastic! You have to use a little effort to get all the veggies ready but it is worth it! I followed the recipe as follows, except I didn't use red wine. I let the soup simmer for 4 hours on the stove. It has a ton of flavor and heats up very well. My kids ate 2 helpings 2 nights in a row! It's a great way to get them to eat their veggies.

My family loved this pizza. I followed the recipe exactly. It was very easy to make. The bread dough created a soft chewy crust. The canned peeled tomatoes gave a lot of flavor, just drain them as well as you can so your pizza won't get too soggy.

Easy and Delicious Chicken and Rice Casserole
