My breakfasts are pretty cool with a variety of hot and cold selections. Fresh fruit, some dairy, some whole grains and a little meat.
My cooking tragedies
One year I attempted to make some corn bread dressing for Thanksgiving dinner, just like my mom always made. It was back in college, some 20 something years ago. Obviously I didn't know what I was doing. The only cornbread that I'd known of was Jiffy cornbread mix in a box. Jiffy cornbread mix has a slightly sweet taste to it. Conversely, Thanksgiving cornbread dressing should not. That was my first and probably ONLY time cooking Thanksgiving dinner. I am grateful that I can now go out to the restaurant of my choice for my holiday celebrations.

N'Awlins Stuffed Bell Peppers
I cheat with Stove top stuffing. I enjoy that flavor and it's quick and easy. For the meat I use crabmeat, baby shrimp and Jimmy Dean pork sausage. I blanch my peppers before stuffing and reserve the liquid for the stuffing mix.

Cowboy Caviar
I used Tahini dressing and red onions. I think I used dried parsley because that's what was on hand. I also added red kidney beans and omitted jalapeno. I look forward to trying it with fresh cilantro.

Avocado Dessert
I added lemon juice and zest for a little kick and Blue Agave as my sweetener. Next time I might try almond or pistachio extract instead of vanilla. I also look forward to trying it with coconut milk. Tasty!
