Oven Roasted Potatoes

As the top reviewer did I also omitted the herbs and kept it simple. I used 6 cloves of garlic and 2 teaspoons each fresh cracked black pepper and kosher salt.I used 6 small sized yukon potatoes cut into wedges.I combined it all in a gallon size ziploc bag for 10 minutes.During the 30 minute cooktime (this will vary depending on your oven so keep an eye on em') I turned and squirted on a tablespoon of olive oil twice to keep moist.Excellent side dish with my ribeye steak !

Chantal's New York Cheesecake

This is a great cheesecake ...... I baked mine using the "waterbath" as I do all my cheesecakes which prevents cracking.Stuck to the original recipe.I also do not leave it in the oven for all those hours which I believe would cause some moisture loss(residual heat). I simply remove it from the oven and waterbath and place the springform pan on a wire cookie grate to bring down to room temperature.After it's cooled it goes into the fridge overnight ....done ! No offense but if your cheesecake "cracks" you either did not use a waterbath or you wayyyy over beat it.

Korean BBQ Chicken Marinade

Great recipe ! I needed a replacement recipe for Korean bbq when my local Korean store closed and was lucky to find this one. I added some minced garlic(4 cloves) and sesame oil(tspn) as some have suggested and my results were over the top !! I marinated my chicken thighs for 24 hours (added some sliced onion as well for marinade) and grilled them on high heat on my gas grill making sure I got some "char" on them for that added flavor. Just make sure you don't walk away from the grill too long as the sugar in the recipe will cause burning.Served my sliced thighs over white rice with green beans sauteed in a blazing hot cast iron skillet with a little vegetable oil and a splash of sesame oil for that added asian twist ....good eats !

Fluffy Pancakes

Excellent recipe ....like several other reviewers I added a teaspoon of vanilla.But to set it apart I think next time I'll top them with creme fraiche,powdered sugar and real maple syrup like the french breakfast spots do.

Chile Verde II

Very tasty and worh the effort ! After reading others reviews I also steamed the tomatillo's and jalapeno's together until soft before blending in my food processor.I also grilled the Poblano and Bells on my gas grill and let steep in a large bowl covered tightly with plastic wrap to soften peppers enough to make peeling and blending a snap.I lightly floured the pork and in batches browned it to a nice golden brown.Unlike most reviewers I did not cook in a crock pot ...instead I used my 9qt dutch oven.The authentic way ?! Cast Iron cooking always produces better flavor/results in my opinion ! Most importantly I only used 1 QUART of low sodium broth !!!! More than enough. This Chile Verde was a hit with the wife so that says alot :) I let this simmer on low(low as my gas flame could go without blowing out) for 6 hours stirring every 30 minutes ....like I said before ..worth the effort !

Scallops with White Wine Sauce I

Great base recipe ...I recommend doubling the sauce as some suggested.I subbed chicken stock for the vinegar and added 2 tablespoons of minced garlic which I believe this sauce demands.I did not broil the scallops ...I saute'd them as I normally do by getting them as dry as possible and sprinkling sea salt and fresh cracked black pepper on them before browning them in a grapeseed/butter mixture in a VERY hot stainless pan for 1 1/2 mins per side to a golden brown on each side. Served Scallops over rice pilaf and drizzled cream sauce over them garnished with fresh chopped parsley. Amazing dish ...

Chicken Florentine Casserole

I followed most reviewers suggestions and sauteed the mushrooms and spinach,place the uncooked chicken on top of that, then continued the recipe as stated.I did grate parmesan on top of the melted mozzarella after removing from the oven.This dish was okay......did'nt knock my socks off though. 3 Stars
