Cajun Shrimp Orecchiette

Wow. This was awesome. My husband loved this and said we should have it weekly. I used half butter and half olive oil for the fat, and maybe put in a bit less than what the recipe called for. I used the Creole Seasoning Blend by Joslyn from this site. I doubled the amount of creole/cajun seasoning and halved the amount of black pepper.

Eileen's Spicy Gingerbread Men

With the exception of blackstrap molasses (which I used), I followed the recipe exactly. I agree that the amount of cloves should be cut in half. Other than that, I really enjoyed these cookies. I did let the dough refrigerate longer than called for. If you do the same, make sure the dough comes to room temperature before baking. Also, let the cookies sit on the cookie sheet a few minutes before removing. I was a bit too excited to try them and the first few cookies tore while removing them from the cookie sheet.

Caramel Apple Pork Chops

Wow. Just wow. I made this as written, except I didn't bake the pork chops. I sauteed the chops, took them out of the pan and made the sauce. After the apples reduced a bit, I returned the chops to the pan, turned the heat down and let the entire thing simmer for a bit. (I'm a sucker for a one skillet meal.) I served these with a veggie couscous (also a quick, one skillet dish.) My husband asked to me put these into our menu rotation, a high compliment from him.

Mall Pretzels

These were great! I agree with other reviewers, though, and recommend immersing the pretzels in boiling the pretzels for 30 or so, until they float to the top. This makes a huge difference in the final product. I also brush the baking sheet with a bit of butter and brush butter/sprinkle salt on the pretzels before baking. These freeze and reheat beautifully.

Taqueria Style Tacos - Carne Asada

This recipe is fabulous. We have made as written several times and it is a favorite! The last time, I tried to be adventurous. I used half the marinade on the steak and refrigerated the other half. I seared the steak on my griddle until medium, then let it rest. I fried about 6 strips of chopped bacon (separately). I then sauteed the cooked bacon, chopped onions and peppers and with about half of the reserved marinade. We sliced the steak and created our tacos, adding avocado and cheese. My husband drizzled the left over marinade on his tacos. If you take anything else from the recipe, the marinade is worth 5 stars alone.

Michelle's Blonde Chicken Chili

I hate the reviews that state: this was a great/awful recipe, but I didn't follow any of the directions or use any of the right ingredients. That said, I love this recipe. However, I use about 4-5 cloves garlic in place of the powder, double the chilies and add celery. I also saute the garlic, onion, celery, and chilies, add the broth and boil the chicken in the broth. (Because of this, I usually add a few cups more broth.) When the chicken is cooked, I shred it and put it back in the broth and add the beans. I also mash up some of the beans for a thicker soup. I've made this the night before, refrigerated and heated in a slow cooker the next morning. It's very yummy. This is excellent for left overs also.

Mexican Casserole

My husband and I use this dish as one of our go-to dishes. This is very simple and tastes great. I've used the Tyson's refrigerated chicken strips to make it even easier. My mom now makes it also. She adds rice to her version, but I think the recipe is great as written.

Oven Baked Jambalaya

This is fabulous. I used the creole seasoning recipe from this site and the dish was perfectly spiced. I didn't have an issue with the rice turning out too crunchy or soggy. We have also substituted barley for the rice and it turns out perfectly.
