Bacon Cheddar Patty Cakes

I thought these had a good flavor. I did make a few modifications based on some of the other reviews. I used five pieces of bacon because we are big bacon eaters. I also only had mexican blend cheese, but I was happy with it. I mixed a couple TBS bread crumbs into the mix to avoid them falling apart, and coated them with flour. I just pan fried them in butter and finished them in the oven. Good flavor, but I think next time I'll coat them in breadcrumbs instead of flour. To avoid having them fall apart on you, you must make sure that, when frying, they are nicely browned before you go to turn them otherwise, you will have mush. Thanks for the recipe!

Jalapeno Cream Cheese Chicken Enchiladas

These were epic! I did make a couple of changes, but the flavor was just incredible. I used boneless pork ribs, seasoned and browned, and then thrown in the crockpot until they were pull apart tender. I used a small can of green chilis instead of jalapenos, and only had half an onion. Finally, I added a can of corn. AMAZING! I really think that the only thing I can say is just ensure that you taste the filling before loading the tortillas because I found mine needed just a touch more salt, which made all of the spices, the chilis, the onions, corn and pork just pop out. DELICIOUS!

French Beef Stew

DELICIOUS! I used fresh tomatoes because I needed to use them up, added half an onion because I also needed to use it up, and deglazed with 1/2 cup white wine and 1 TBS worcestshire. Crock pot for about 8 hrs on low and it was great! Be sure to check the seasoning at the end. Once I adjusted the flavors, I thought it was amazing! Great stew recipe!

Asparagus Quiche

This was delicious! I was very pleased with how it turned out. The only changes I made were that I used a homemade crust, rubbed the crust with butter instead of egg whites, omitted the nutmeg, milk instead of cream, and a mexican blend of cheeses because that's all I had. I baked it for almost 40 minutes, and I was thrilled with the flavors. DELICIOUS! My husband, who is very careful with trying new things, went back for seconds, and would have gone back for thirds but he said he couldn't fit anymore. I will definitely be making this again!

Carrots ala Camille

I liked the flavor, however, I made a couple modifications that made these carrots awesome. First, I roasted them with olive oil and salt at 375 for about 20 minutes, stirred and then turned the temp up on the oven to 425 for another ten minutes or so, or until tender. I then heated about two tablespoons of butter in a skillet on med high heat and added the carrots as well as two to three tablespoons of maple syrup. I let it bubble a little bit, stirring frequently, and the butter and syrup carmelized together, forming a very tasty, carmel. I served immediately. They were great like this!

Cheesy Sausage Pasta

I thought this was very tasty. I did not have a pepper so I used all onion, and half n half in place of heavy cream. I also used fettucine because I didn't have anything else. Added a little crushed red pepper just for some kick, and salted it for flavor. It was really good, and my husband really liked it too. I will definitely make this again!

Honey Roasted Carrots

Mushroom Risotto

This was wonderful, full of flavor, and I had to make a couple of substitutions based on what I had and didn't have. I didn't have the parsley, celery, milk or heavy cream. I sauteed the onions, garlic, and mushrooms (canned) in a little butter and then added a half teaspoon of dried rosemary. Seasoned with salt and pepper. I then added the rice and 1/3 of a cup of 1/2 and 1/2 (I "thirded" the recipe since it was just for me and my husband). I then added chicken broth, a half cup at a time. I used about 2 cups total broth. I tasted frequently, seasoning with salt and pepper as needed, and it came out creamy, full of flavor and delicious. I even forgot the butter, just sprinkled with parmesan and fresh ground pepper. Delish! I will definitely be making this again. My first time making a risotto and it came out restaurant quality. Flourless Peanut Butter Cookies

These turned out very well. They were delicious, and nice and peanut buttery and sweet. I dipped the fork in water and used it to press the cookies and sprinkled them with sugar. I also topped each one with a semi sweet chocolate chip after I pulled them out of the oven. Very good, and my sweet husband liked them too!

Garlic-Lime Chicken

This is an awesome marinade! I wish I could give it more stars. I made it this afternoon and marinated it for about 8 hours. After reading other reviews, I decided to half the soy sauce and added just a small splash of water. Used 1/2 a lime and cooked it on the grill. After I removed it from the grill, I squeezed the other half of the lime over the chicken with some fresh ground pepper. The chicken was PERFECT! Moist, very flavorful, in fact the best chicken I've ever had. My husband asked if there was more. I made some onions on the grill (just brushed them with melted butter and a sprinkle of chicken boullion granuals, topped with fresh ground salt and pepper) and served with broccoli and mashed potatoes. I will make this over and over again. Thanks for the great recipe!

Spicy Tomato and Lentil Soup

I found this recipe to be a wonderful idea. I doubled it and it was lovely. I changed a couple of things to suit our taste: I used a jalepeno instead of a chile, chicken broth instead of water, about 2 teaspoons of cumin, 5 cloves garlic, lots of lime juice, salt and seasoning. I also added oregano since I did not have basil. Served with sour cream and cheese. This was a very simple soup, everyone liked it a lot, and I am delighted to make it again!

Chicken Breasts in Caper Cream Sauce

I made this for the first time tonight, and it was delicious. The only change I made (based on other reviews) was that I seasoned some flour with dill, salt, white pepper, and garlic powder and breaded the chicken before pan frying it in oil in the pan. I used lemon juice in the cream, seasoned the cream with white pepper and salt. I served it over spaghetti with salad and green beans. It was wonderful! I will definitely make this again!

Braised Balsamic Chicken

I thought it was tasty, but since I didn't know how much my family would enjoy the vinegar, I halfed it. The dish was a little acidic, but I would like to play around with it to see if I can tone that down. Maybe use fresh tomatoes? Good recipe, though, otherwise.

Chewy Granola Bars

This is an excellent recipe! Very tasty! I used gluten free oats and gluten free baking mix, and for the two cups of chocolate chips, I substituted a cup and a half of diced apple and a half cup of cinnamon chips. They turned out great! Chewy, moist, and delicious! Thanks for the recipe!

Grandma's Green Bean Casserole

I love this recipe! When I make it, I omit the sugar and the crackers. I fry up three or four pieces of bacon and saute the onion in about a TBS of the bacon fat, a teaspoon of butter and the flour. I then add the green beans (I think fresh are better), the onions, sour cream, the crumbled up bacon, a cup of the cheese, and some of the French's fried onions that are usually traditional with this dish. Season to taste. This all goes into a casserole dish, and it is topped with the remainder of the cheese and sprinkled with some more French's fried onions. Even my husband, who HATES sour cream, loves this dish! A definite keeper!
