Country Style Green Beans with Red Potatoes

In our house, we call these hillbilly green beans. Only we use vegetarian bakon bits to give it that smoky salty taste. It cooks down rapidly and the kids finish the entire pot they love it so much.

Creamy Italian Dressing I

Sweet, Sticky and Spicy Chicken

5-28-2013 - I loved this recipe. I veganized it with Gardein chik'n strips and used agave nectar instead of honey. I thought it was fabulous. Since my husband is not too crazy about spicy food, I cut down the hot sauce to half. Other than that and that I coated the chikn strips with flour, it was a great recipe. I highly recommend it.

Smooth Cauliflower Soup

Very good. I veganized this soup by using homemade vegetable broth which I watered down to produce the amount of cups I needed. After blending it, I added a touch of soy milk for more creaminess. This is a 5 star recipe.

Creamy Vegan Corn Chowder

I loved this recipe. I made it exactly as is written; however, it didn't thicken up like I wanted it to, so I added arrowroot which really does the trick. Also, added a tablespoon of maple syrup as was suggested in another recipe I read. It'd delicious and with the addition of arrowroot, gluten free. Thanks for sharing this.

Sopa De Lima (Mexican Lime Soup)

Great soup easily made vegan/vegetarian by the substitution of chicken broth with vegetable broth and chicken breast with vegan chicken. I also added some broken up pieces of cooked spaghetti. Absolutely delicious.

Very good and fresh on a summer's day outside. I added jalapeno and made a lemon viniagarette to pour over as our Italian dressing is on the sweeter side. This is delicious.

Hungarian Mushroom Soup

Interestingly, I first had this soup at the Hanepepe Cafe in Hanepepe, Kauai Hawaii. I loved it so much, I tried to find out what was in it as I had never heard of it before. The lady told me paprika and dill. I thought I could figure it out and make it and lo and behold - here it is on allrecipes. Fantastic. I veganized it by using Earth Balance, tofutti sour cream and soy milk. It's amazing. It would be hard to make this recipe anything but fabulous. Loved it.

This is fabulous!!! I veganized it by using vegan sour cream and vegan mayonnaise. I left out the boiled eggs and it was heavenly. Love it, love it, love it. I'll be making this often.

Avocado Tacos

I really loved this simple dish. You could add jalapenos to it to give it a kick. I added a dash of rooster sauce and it was perfect. This is a great vegetarian find.

Vegan Red Lentil Soup

I made this exactly the way the recipe was written. For me, this didn't have enough liquid. So, I had to add water and vegan no chicken broth to it so the lentils and squash would cook. I nuked the squash beforehand to make it faster. It became so thick I was afraid the lentils wouldn't cook. In the end, it was delicious and such a vibrant color you knew it just had to be good for you.

This was very good. I made a vegan version using LifeLife ground "beef" crumbles. It lacked a little something for me so I added some Rooster sauce and A-1 sauce and that brought it altogether. Also, added a finely diced jalapeno to the peppers.
