About this Cook
I listed myself as intermediate but feel that I really have not mastered the art of cooking. For so many years, I have focused on a career and only done basic cooking. My recent resolution was to improve my cooking skills and am using the receipes on this website to develop new cooking skills. Last, I recently fufilled a dream to move to Colorado (from Arizona). In spite of the snow and cold, I am enjoying every minute. I learned, dreams are met to come true....so I made it so.
My favorite things to cook
I am sensitive to milk especially cheese so although I love one dish recipes, most of them involve chees so I cannot eat them. I look for simple, easy to make receipes without cheese.
My favorite family cooking traditions
I love my former mother-in-law's Swedish meatballs and try to make them every December. I posted them on this site and called it Corky's Swedish Meatballs.
My cooking triumphs
Nothing lately, but will keep you posted if I do have one.

Perfect Baked Jerk Chicken
I absolutely loved this receipe when it came out of the oven. I was so anxious to eat the left overs the next day and was disappointed. I will definitely make this again but only make just enough to eat that day.

Chicken with Bouillon
I did not care for this recipe. It was tasteless except for the salty flavor.

Mini Mushroom and Goat Cheese Tarts
I jumped at this receipe because of the goat cheese and th reviews. I could not keep the mushroom mixture and cheese on top of the pastry and had to use a knife and fork.....not convenient for an appetizer. I agree with most of the comments that more blending of the flavors is necessary along with other ingredients like onions and peppers. I think baking the mushrooms and cheese inside a pastry would keep the appetizer together and blend the flavors.
