Barbeque Pork Two Ways

I seasoned my meat (pork loin & boneless ribs) with seasoning salt, garlic powder, pepper, Accent, and a touch of chili powder. In the sauce I added about 1/2 cup of commercial bbq sauce, an extra clove garlic, and about 2 t. liquid smoke. I cooked the night before in crock pot (smell was incredible) and refrigerated so I could skim grease off next day. Meat was very flavorful and tender.

Holiday Chicken Salad

Soak the cranberries in enough hot tap water to cover for about 15 minutes and then drain on paper a towel. This will keep them from drawing moisture from the mayonnaise and thus creates a moister salad. I also added a little garlic powder.

Mary's Meatloaf

This will be my new meatloaf recipe. Meatloaf was very good, moist, and easy. I used about 1-1/2 t. of Lawry's seasoning salt instead of plain salt.

Bean Soup

Right after cooking, the soup is pretty bland. Much better after it sits in the refrigerator overnight. I think adding chicken broth, garlic and/or liquid smoke would help make recipe more flavorful.

Aunt Blanche's Blueberry Muffins

These muffins are fantastic. I added about a teaspoon of vanilla and a little more blueberries. I used frozen blueberries that I allowed to thaw. I also made a topping of; 1/2 C sugar, 1/3 C flour, 1/4 C butter and 1-1/2 t cinnamon and sprinkled on top before baking. Delicious!

Caramel Frosting IV

THis is very similar to a recipe I use. I want to add that using dark brown sugar instead of light brown makes a much tastier frosting. This is wonderful on yellow cake.

Baked Spaghetti Squash Lasagna Style

This is a good recipe if you're on a low carb diet. It was my first time using spaghetti squash, and I don't think I cooked it long enough. It was much too crunchy for me.However, I will try again maybe using a little water on cookie sheet to soften the squash and adjusting cooking time. I also wouldn't mess with putting it back in the shells... I would just use a baking dish. I also it makes more like 3 servings than 6.

Cherry Pound Cake

Wonderful! I took the advice of other posters and added more cherries. I decorated with a glaze made from reserved cherry juice, powdered sugar, & almond extract. I made this 2 days ago and it is still moist. I cooked it in a bundt pan for only 50 minutes.

Martha's Vegetable Beef Soup

This soup was good and very easy and quick. I used leftover beef from roast and other leftover vegetables. I also added a little more sugar and a little granulated beef boullion. Very good taste with little effort.

Aunt Nancy's Grape Salad

I used 8 oz of heavy cream that I whipped with Equal instead of the Cool Whip. I also used drained Mandarin oranges instead of the grapes. It came out delicious and low carb since cream, Equal, & Cream Cheese are very low in carbs. Next time I will add pecans as well.

Cornbread Stuffing With Sausage

My husband liked this recipe a lot; however, I wasn't fond of it at all. I was confused on the bread crumbs. I used the finely chopped bread crumbs, but was wondering if recipe really meant the herbed cubes that are usually used for dressing. The finished product was just a gooey mess in my opinion.

Baked Chicken on Rice

Contrary to other reviews, I thought this was pretty good. I did modify it a bit. I seasoned my chicken with garlic, salt & pepper; drained the mushrooms; only sprinkled about 1/4 of the onion soup on top; used skim milk; and only cooked for covered for 45 min. Rice was moist and chicken very tender.

Chicken and Dressing Casserole

Really easy to make. When I make it again I will use a little less butter, as it was slightly greasy right after cooking. I would recommend making it a day ahead of time as it was much better the next day.

Southern Candied Sweet Potatoes

Delicious!! I did use mostly light brown sugar with about 1/2 cup of white sugar. The taste was wonderful. I'm serving these tomorrow for Thanksgiving. The only problem I had was that they were done a lot earlier than I expected, so they got a little softer than I wanted and since I'll have to warm them tomorrow, I'm afraid they may get too mushy. Also they didn't candy like I expected, so I added a touch of cornstarch to the juice to thicken it a bit. You can't beat the taste though!

Chunky Chicken Vegetable Soup

Very good. However, it needs a little "doctoring up". I used frozen broccoli and cauliflower mix (I didn't thaw first as recipe suggests). I also used instant brown rice instead of white. I like the texture of brown rice better, but I think a cup was too much. The dressing mix give the soup a very nice flavor but I still had to add salt and I added a few shakes of McCormick's Garlic Pepper. Very easy to make. I had it done and on my way out the door in 1/2 hr.

Balsamic Chicken and Fresh Mozzarella

I didn't care for this like I thought I would. Could have been the modifications I made. I didn't have whole breasts so I used strips. I marinated and coated with Italian Panko before frying. I layered everything in a pan and put in oven just to melt the cheese. They only flavor I got from the dish was the Panko (thank goodness I used it), and the tanginess of the tomatoes. It wasn't bad, but just not a 4 or 5 star dish in my opinion.

Hot Water Cornbread

This recipe is similar to how my mother used to make them, minus the sugar. However, I the ladies at church whip up a batch and they just used self-rising white cornbread and added hot water to it until it was the consistency of mashed potatoes. Then, she dropped spoonfuls in deep fat. They looked more like hush puppies than pancakes, and they were delicious. No need for butter, honey, or anything else. Wonderful with collard greens.

Best Ever Meatloaf I

Pretty good. I added some garlic powder and dry onion soup mix instead of the fresh onion and salt. I also topped with a mixture of ketchup, brown sugar, worcesteshire sauce and a touch of mustard... no exact measurements, just mixed until I was satisifed with taste. I think that the recipe as it is written may be a little plain and needs enhancements.

No Bake Sugar Free Cheese Cake

If you're on restricted diet, this is a pretty good recipe. I used 2, 8 oz pkgs of cream cheese instead of 1. That gave it a creamier texture and better taste, but I also had to add a little sugar substitute to taste. For the crust I substituted 1 C of finely chopped walnuts mixed with 2T melted butter and 1/2 t cinnamon and sugar subsitute to taste.
