Oregon Salmon Patties

Reviewed: Sep. 23, 2003
I made these for my husband, since I don't like salmon patties. He hadn't had any for over 20 years and I had never attempted to makee any. He absolutely loved these. He said they tasted better than his mom's (yes!!). I did add some chopped green onions to the salmon and a little Old Bay seasoning and a little garlic powder.

Baked Spaghetti Squash Lasagna Style

Reviewed: Aug. 16, 2003
This is a good recipe if you're on a low carb diet. It was my first time using spaghetti squash, and I don't think I cooked it long enough. It was much too crunchy for me.However, I will try again maybe using a little water on cookie sheet to soften the squash and adjusting cooking time. I also wouldn't mess with putting it back in the shells... I would just use a baking dish. I also it makes more like 3 servings than 6.

Fried Cabbage II

Reviewed: Aug. 11, 2003
This was pretty good. I had to add a little more sugar. I also cooked the vinegar with the cabbage instead of adding it at the end.

Easiest Peanut Butter Fudge

Reviewed: Aug. 10, 2003
This was really good and actually the first fudge I've made that turned out well. However, I would suggest reducing the brown sugar to about 2 C or a little less and increasing the peanut butter to about 1 C. You may also want to decrease the confectioner's sugar but I don't know if that would intefere with the firmness. Recipe as is, is very sweet.

Cornbread Stuffing With Sausage

Reviewed: Aug. 4, 2003
My husband liked this recipe a lot; however, I wasn't fond of it at all. I was confused on the bread crumbs. I used the finely chopped bread crumbs, but was wondering if recipe really meant the herbed cubes that are usually used for dressing. The finished product was just a gooey mess in my opinion.

Candied Sweet Potatoes

Reviewed: Aug. 4, 2003
Very tasty. I cut butter back to about 1 -1/4 stick. Next time I would also cut back on the sugar. I also did not add nutmeg.

This is delicious! I would suggest adding salt and sugar to taste. Not only was it good but made for a nice presentation.

Aunt Blanche's Blueberry Muffins

Reviewed: Jul. 13, 2003
These muffins are fantastic. I added about a teaspoon of vanilla and a little more blueberries. I used frozen blueberries that I allowed to thaw. I also made a topping of; 1/2 C sugar, 1/3 C flour, 1/4 C butter and 1-1/2 t cinnamon and sprinkled on top before baking. Delicious!

Barbeque Pork Two Ways

Reviewed: Jun. 29, 2003
I seasoned my meat (pork loin & boneless ribs) with seasoning salt, garlic powder, pepper, Accent, and a touch of chili powder. In the sauce I added about 1/2 cup of commercial bbq sauce, an extra clove garlic, and about 2 t. liquid smoke. I cooked the night before in crock pot (smell was incredible) and refrigerated so I could skim grease off next day. Meat was very flavorful and tender.

Gramma Bertha's Banana Cake

Reviewed: Apr. 22, 2003
Cake was moist and just average taste to me. Not much different though from any standard banana bread recipe. I topped with cream cheese frosting which really helped it out.

Chicken and Dressing Casserole

Reviewed: Feb. 25, 2003
Really easy to make. When I make it again I will use a little less butter, as it was slightly greasy right after cooking. I would recommend making it a day ahead of time as it was much better the next day.

Baked Chicken on Rice

Reviewed: Jan. 26, 2003
Contrary to other reviews, I thought this was pretty good. I did modify it a bit. I seasoned my chicken with garlic, salt & pepper; drained the mushrooms; only sprinkled about 1/4 of the onion soup on top; used skim milk; and only cooked for covered for 45 min. Rice was moist and chicken very tender.

Bean Soup

Reviewed: Jan. 18, 2003
Right after cooking, the soup is pretty bland. Much better after it sits in the refrigerator overnight. I think adding chicken broth, garlic and/or liquid smoke would help make recipe more flavorful.

Martha's Vegetable Beef Soup

Reviewed: Jan. 14, 2003
This soup was good and very easy and quick. I used leftover beef from roast and other leftover vegetables. I also added a little more sugar and a little granulated beef boullion. Very good taste with little effort.

Awesome Slow Cooker Pot Roast

Reviewed: Jan. 12, 2003
Recipe was good, but not best I've had. As one reviewer suggested, I substituted french onion soup for the water. I also seasoned beef with seasoning salt and pepper. I also made slits in the beef and filled them with garlic cloves. Without the seasonings, I think the meat would be pretty bland.

Baked Ziti I

Reviewed: Jan. 5, 2003
Easy and very good. I used low fat sour cream to cut back on some of the calories since recipe is high in fat. Next time would probably also use low-fat mozarella.

Mary's Meatloaf

Reviewed: Dec. 29, 2002
This will be my new meatloaf recipe. Meatloaf was very good, moist, and easy. I used about 1-1/2 t. of Lawry's seasoning salt instead of plain salt.

Sweet Potato Casserole II

Served this at Thanksgiving. Everybody loved it. I used a little more sugar & butter (real not diet) than recipe called for. I whipped potatoes with electric mixer to save time. Really fast and easy.

Alison's Slow Cooker Vegetable Beef Soup

Reviewed: Nov. 10, 2002
I eliminated salt and reduced boullion to 5 cubes. I also added shredded cabbage & celery. It wasn't the best, but was much better the next day. By the way if soup becomes too salty just add a few more potatoes to soak up the salt.

Incredibly Delicious Italian Cream Cake

Reviewed: Oct. 5, 2002
The frosting was very delicious; however, the cake in my opinion was good but a little heavier/denser than I like. I made 1/2 the recipe and baked in an 8" square pan.
