Creamy Au Gratin Potatoes

I just made a "test" batch of these to experiment with before my meal tomorrow. Here are some changes I made and some things I will do different. I microwaved the potatoes for about 6 minutes before slicing.I layered the potatoes and sauce adding salt, pepper, and a little garlic powder to each layer of potatoes (best to salt them while they are warm). I also minced the onions and added a few over each layer of potatoes and the remainder I put in the cheese sauce. I added more cheese and more milk to the sauce along with a salt to give it more taste. I cooked as directed, but removed foil near the end and added buttered cracker crumbs and cooked under broiler until slightly browned. After removing from oven, I crumbled bacon on the top. Next time, I will double the sauce and maybe add less flour to the cheese sauce as I felt it ended up too thick (that's why I added more milk). I'll also pre-cook the potatoes a little longer as the longer they cook in the sauce the dryer it dish gets. Update: Made these with double the sauce... Don't do it!! The potatoes came out a greasy mess. Had to to throw them out.

Southern Candied Sweet Potatoes

Delicious!! I did use mostly light brown sugar with about 1/2 cup of white sugar. The taste was wonderful. I'm serving these tomorrow for Thanksgiving. The only problem I had was that they were done a lot earlier than I expected, so they got a little softer than I wanted and since I'll have to warm them tomorrow, I'm afraid they may get too mushy. Also they didn't candy like I expected, so I added a touch of cornstarch to the juice to thicken it a bit. You can't beat the taste though!

Pork Chops to Live For

I took others' suggestions and didn't dip in the egg. However, I seasoned with garlic powder, pepper, and flour and browned in skillet. I then followed the recipe to the "t". My chops were dry and the "gravy" was not good at all in my opinion. I use a similar recipe that calls for the meat to be browned, sprinkled with dry onion soup and topped with cream of mushroom and wate and it's very good. I think the addition of the milk is what gave this recipe a strange taste.

Zucchini Pineapple Bread I

Very good and moist. I followed recipe exactly except I added about 3/4 C nuts. I know some reviewers thought there was too much sugar, but I found it to be a good amt... maybe even not enough. The recipe didn't say whether to drain pineapples or not, so I did drain and it turned out fine.

Simple Taco Soup

This was good, but nothing special. I made it exactly as written and found it to be a little too spicy for my taste (I used mild rotel). If I ever made it again (which I probably won't), I'd use black beans instead of the pinto beans and maybe kidney beans instead of the chili beans. I don't have a clue why the ranch dressing mix was added. I couldn't taste it at all.

Chess Pie

This is very similar to recipe I've used for years and that people at my church ask for frequently. However, my recipe only uses 3 eggs and 1-1/2 C sugar. It does crack a lot which I don't like. Letting it cool in the oven will help somewhat, but I believe the cracking is due to the cornmeal which forms the crust. A lot of the seasoned-chess-pie-makers I know do not include cornmeal in their recipes.

Pennsylvania Coal Region Barbecue

Very good recipe. I followed recipe exactly except that I used cider vinegar instead of white vinegar and I added onion powder since I didn't have enough onion on-hand. Much much better than the canned stuff!!

Peach Cobbler Dump Cake I

I was very skeptical, but this turned out delicious! I used peaches canned in their own juice and also sprinkled a little bit of brown sugar on the top before baking. I topped with real whipped cream (not the stuff in the tub) before serving. I will definitely make again .... and again......

Pea Salad

Very good and quick. I added marinated cauliflower and green peppers to mine. Also a little salt and sugar. Next time, I'll use other reviewers' suggestion like bacon and boiled eggs.

P.J.'s Fresh Corn Salad

Very good... refreshing and colorful. I didn't have red onions, so I used chopped vidalia and also substitued green peppers for the red. I blanched my corn prior to adding. This would also be great with a little garlic powder, cumin, and black beans!!

Fresh Strawberry Upside Down Cake

Cake has a very good taste. My problem was that I couldn't get it out of the pan, so we ate it more like a spooned dessert. I greased the bottom of the pan, which the recipe doesn't say to do, so that is probably why I had problem. I used a butter recipe yellow cake, fresh strawberries that I slightly sweentened the night before and sugar free jello. I may try again in the future w/o greasing the pan.

Coconut Poke Cake

I am rating this recipe exactly as it is written. It is way too sweet. I won't make it again, but I woud suggest to anyone who does try it to cut back on the sweetened cond. milk. Or just make half the milk/coconut cream mixture for the cake. Real whipped cream would make it better too, but the real problem is the overly sweet cake.

Soft Christmas Cookies

Love this recipe. Not only were cookies soft, but delicious too! I didn't change anything in the actual recipe (except butter instead of margarine) and didn't have to refrigerate the dough at all. I rolled on parchment paper lightly dusted with confectioners sugar. I like to use the Sugar Cookie Icing from this website as it dries hard like bakery treats. I used this to make heart-shaped cookies for a Valentines function and everyone thought they were from a bakery. They were all gone withing 30 minutes!!

Sugar Cookie Icing

Love this! I used it at Christmas and Valentines day. One group like it with almond and the others liked it with vanilla. Really pretty when it dries and keeps the shine. I've always had to add more milk to make it the right consistency. Can spread with a spoon, use a brush, or a knife/spatula. Works great!

Buttercream Icing

Curiosity made me interested in this as I had never made a buttercream with shortening. Definitely will not ever do again.... buttercream frosting is much better with butter only. Only good thing about this was that it was fluffier than if made with all butter. It had so much of a shortening taste, that I added cocoa to make it a chocolate frosting instead.

Hot Water Cornbread

This recipe is similar to how my mother used to make them, minus the sugar. However, I the ladies at church whip up a batch and they just used self-rising white cornbread and added hot water to it until it was the consistency of mashed potatoes. Then, she dropped spoonfuls in deep fat. They looked more like hush puppies than pancakes, and they were delicious. No need for butter, honey, or anything else. Wonderful with collard greens.

Caramel Cake I

This rating is for the frosting only! It was delicious, however, I had a difficult time getting it to thicken even though I followed recipe to the "t" using a candy thermometer. I beat it with electric mixer for several minutes... nothing happened. I finally refrigerated it, beat it again, refrigerated again, and beat it again on high for several minutes and got a consistency I could spread. Thank goodness I cooked my cake in a 9X13 pan instead of layers because the frosting never got stiff enough to frost cake sides. I sprinkled the pecans on the top. Also be prepared to wait at least an hour for the cake to cool to correct temperature. All in all it is a very tasty frosting, just time consuming.

Buttermilk Pound Cake II

Good taste, but somewhat on the dry side. Also, I would suggest omitting the lemon extract or using real lemon juice. The extract gave it a little artifical taste.

No Drip Ice Pops

These were ok. I was looking for something lo-cal to make and with ingredients I already had. I used strawberry-banana no-fat yogurt and cherry sugar free jello. Very tasty. Be sure to freeze completely to avoid the spongy texture. I'll try other flavors later and maybe see if I can leave the banana out.

The Whole Jar of Peanut Butter Cookies

Others obviously love this recipe, but I'm just not one. The texture was crumbly and kind of cake-like. Also, I was very surprised that they lacked taste. With all that peanut butter, I expected a lot more. I'll go back to my old Betty Crocker recipe.
