Pineapple Upside-Down Cake VII

Reviewed: Jan. 24, 2014
Delicious!! This cake is wonderful. I didn't know what size cast iron skillet to use, so I used 9X13 pan. I didn't attempt to turn it out of the pan since I didn't have a tray or plate big enough to hold the entire cake. So we just cut pieces while still in the pan. Not pretty, but very good. I had to make myself stop eating it. I used a white cake mix, but substituted pineapple juice for the water. I also added 1t almond extract and cut back a little on the brown sugar.

Tres Leches (Milk Cake)

Reviewed: Jan. 11, 2014
I didn't care for this recipe at all! Thank goodness I just made half the recipe. The milk soaked in almost immediately and I refrigerated for 4 hrs. The consistency reminds me of wet cornbread and the taste is very eggy. I don't recommend.

Sweet Dinner Rolls

Reviewed: Dec. 24, 2013
Delicious!! I made these today using my bread machine's dough feature. They didn't bake up very pretty, but man are the good!!! I forgot to brush the butter on the dough after rolling it out, so I just dotted the rolls with butter before putting them in the oven. Definitely a keeper!!

David's Yellow Cake

Reviewed: Dec. 7, 2013
I generally always prefer a cake from scratch over a box mix, but not in this case. This recipe came out eggy tasting, hard and kind of crunchy on the edges and not very pretty at all. The only change I made was to use all purpose flour instead of cake flour, but I sifted it 3 times before using. I would have given it just 2 stars, but the texture was light and fluffy (be sure to cream the butter & sugar for a long time if you want to use this recipe) but that's the only good thing. I can say about this recipe I will frost with a caramel frosting to help make up for the eggy taste. Using whole eggs may make the cake taste less like cornbread. I thought I would never say this, but if you want a yellow cake...buy a butter recipe box mix instead of using this recipe!

I'm rating this using the recipe exactly as written...no changes. Very good and easy. Also an attractive cookie.

Banana Butter Icing

Reviewed: Jan. 26, 2013
Very good. I left mine a little thin because it was getting too sweet. I suggest using a very ripe banana. You can usually find them at the store at a discount. I get them and freeze them until ready to use.

White Chocolate Macadamia Cranberry Dreams

Reviewed: Dec. 8, 2012
Way too sweet. The cranberries and macadamia worked fine, but whenever I had a bite that contained a white chocoate chip, it was just too sweet. I would suggest just using a good oatmeal cookie recipe and instead of using raisins/pecans, use cranberries/macadamia instead. I would not recommend the chips at all!!

Apple Crisp III

Reviewed: Sep. 16, 2012
The taste of this was just ok, but the presentation was unappealing. I wouldn't serve this to company as it goes very flat and the bake time is so long that the apples turn to soft mush. I used Granny Smith apples and they gave it a tartness that could have used a little sugar mixed in with the apples. It was taking a long time for the topping to brown and if my apples had cooked too much longer, they would have completely disappeared, so I put the dish under the broiler for a few minutes. The taste is ok, but I wouldn't use this recipe again unless I was stuck in the house with only a few ingredients. My suggestions if you chose to use this are to cut the apples in thick slices, double the amount of apples, mix them in a sugar/flour/cinnamon mixuture before adding the topping.

Amish Macaroni Salad

Reviewed: Sep. 5, 2012
Delicious. I would have rated five stars but i made a few minor changes. I cut the sugar just a little. I'm used to sweet macaroni salad, so the amt in the recipe wasn't that bad to me. I omitted the celery seed because i don't care for it. I actually made this 2 days in advance and it improved in taste each day. However, it start to dry out after the 1st day. So, i added plain mayonnaise to make it creamier. The mayonnaise actually improved the taste to me. So, if i made again and was going to use immediately, I'd probably substitue about 1/2 C of the miracle whip with mayo.

Slow Cooker Beef Stew I

Reviewed: Sep. 24, 2011
This was good, but nothing special. I made it as written except, I added some Kitchen Bouquet near the end to darken the gravy and give a bit more flavor. I also made a slurry of flour & water to thicken up the gravy at the end. I don't see any reason to fry the meat first as some did. My meat came out very tender and flavorful.

Old Fashioned Potato Salad

Reviewed: Sep. 24, 2011
I would love to rate this "as is"; however,I am rating with a few changes I made. As others suggested, I used green onions, half mayo/half sour cream, and added pickle relish. I also added about 1T of yellow mustard and approx 1 T of dry ranch dressing mix. Sugar is also needed to balance out some of the tartness of the mayo and sour cream. Definitely use real bacon and fry it until crisp.....microwaving doesn't get the desired texture. This is sort of a base recipe that you can add to to suit your own tastes. I made this for a big church pot luck dinner and it was gobbled up quickly, with requests for the recipe.

Balsamic Chicken and Fresh Mozzarella

Reviewed: Jul. 17, 2011
I didn't care for this like I thought I would. Could have been the modifications I made. I didn't have whole breasts so I used strips. I marinated and coated with Italian Panko before frying. I layered everything in a pan and put in oven just to melt the cheese. They only flavor I got from the dish was the Panko (thank goodness I used it), and the tanginess of the tomatoes. It wasn't bad, but just not a 4 or 5 star dish in my opinion.

Pizza Casserole

Reviewed: Jul. 16, 2011
I really enjoyed this. To be more healthy, I used whole wheat rotinin instead of the noodles. Other small changes I made were to season ground beef with garlic powder and salt, added oregano to sauce, used spaghetti sauce instead of pizza sauce, didn't use the milk, and added some shredded Italian Cheese after baking. Easy, filling, and delicious. Makes a Saturday lunch or dinner.

Whole Wheat Honey Bread

Reviewed: Jun. 18, 2011
Delicious. I followed the recipe as written but added about a handful of chopped pecans. I used the whole wheat setting on the bread machine and stopped the baking process 10 minutes before it was going to end to keep from getting a dry product. I will make this many more times.

Slow Cooker Texas Pulled Pork

Reviewed: May 28, 2011
This was totally not what I expected. I ended up basically with a pork roast floating in a thin flavorless liquid. I ended up removing the roast from the liquid, pulled the meat apart, put it back in the slow cooker with about a cup of Sweet Baby Ray BBQ sauce with some teriyaki sauce added to it. That helped a great deal. Also, the meat needs to be seasoned prior to cooking. I rubbed mine in seasoning salt, paprika, pepper, & Grill Mates mesquite and it was still bland. I guess I'm just used to my meat having much more flavor than this turned out. Will not be making this again. Update -- I am updating this rating because with the changes I made the meat is delicious the 2nd day.

No Crust Strawberry Pie

Reviewed: Mar. 31, 2011
I am always looking for sugar free desserts, so when I had this pie at a local diner I had to ask for the recipe. The recipe is almost the same as this one, except that the diner's recipe called for 2-1/2 C water and 4 C strawberries. I think its very good. I would never have guessed it was sugar free. I topped with homemade whipped cream sweetened with splenda. The diner put theirs in a crust and topped with sugar free non-dairy topping. Its light and refreshing and hits the spot without a lot of calories. I also have topped sugar-free cheescake with this and its delicious.

Easy Chicken Divan

Reviewed: Mar. 5, 2011
Better than I thought, but I had to make changes. I took the suggestions of other reviewers and used, cream of broccoli & cream of chicken; sprinkled taco seasoning and garlic powder on chicken; and used sour cream instead of mayo. I also used cream instead of milk, hoping to kill some of the artificial taste of the soups. I also put under the broiler for few minutes to brown the top. If you use frozen broccoli, thaw and drain completely. I even hand squeezed mine to remove excess water. Since I made so many changes I rated the recipe as written as a 3 star; however, with the changes, I'd rate it 4!

Cocktail Meatballs

Reviewed: Dec. 26, 2010
These were ok, but not exactly what I expected. I wanted a sweet meatball, but to me these were more tangy than sweet. I'm not sure if it was the lemon or if it was the choice of cranberry sauce I used.I would have been better off just using a bottle of BBQ sauce.

Chocolate Pecan Pie I

Reviewed: Dec. 24, 2010
I cooked pie for 65 minutes and it still didn't get done in the center. The edge of the pie was overcooking so I had to stop the baking process. Ended up with a pie that was hard on the edges and runny in the middle. The actual taste wasn't too bad though. Just a little too sweet for my taste. I melted my chocolate with the butter and maybe that's what messed the baking time up. Also, it needs something other than store-bought pie crust. It was just too overwhelming. Update: ok....after the pie sat overnight, it set up a bit more and the taste is fantastic. I could eat it all before company arrives!
