Slow Cooker Beef Stew I

This was good, but nothing special. I made it as written except, I added some Kitchen Bouquet near the end to darken the gravy and give a bit more flavor. I also made a slurry of flour & water to thicken up the gravy at the end. I don't see any reason to fry the meat first as some did. My meat came out very tender and flavorful.

Old Fashioned Potato Salad

I would love to rate this "as is"; however,I am rating with a few changes I made. As others suggested, I used green onions, half mayo/half sour cream, and added pickle relish. I also added about 1T of yellow mustard and approx 1 T of dry ranch dressing mix. Sugar is also needed to balance out some of the tartness of the mayo and sour cream. Definitely use real bacon and fry it until crisp.....microwaving doesn't get the desired texture. This is sort of a base recipe that you can add to to suit your own tastes. I made this for a big church pot luck dinner and it was gobbled up quickly, with requests for the recipe.

Balsamic Chicken and Fresh Mozzarella

I didn't care for this like I thought I would. Could have been the modifications I made. I didn't have whole breasts so I used strips. I marinated and coated with Italian Panko before frying. I layered everything in a pan and put in oven just to melt the cheese. They only flavor I got from the dish was the Panko (thank goodness I used it), and the tanginess of the tomatoes. It wasn't bad, but just not a 4 or 5 star dish in my opinion.

Pizza Casserole

I really enjoyed this. To be more healthy, I used whole wheat rotinin instead of the noodles. Other small changes I made were to season ground beef with garlic powder and salt, added oregano to sauce, used spaghetti sauce instead of pizza sauce, didn't use the milk, and added some shredded Italian Cheese after baking. Easy, filling, and delicious. Makes a Saturday lunch or dinner.

Whole Wheat Honey Bread

Delicious. I followed the recipe as written but added about a handful of chopped pecans. I used the whole wheat setting on the bread machine and stopped the baking process 10 minutes before it was going to end to keep from getting a dry product. I will make this many more times.

Slow Cooker Texas Pulled Pork

This was totally not what I expected. I ended up basically with a pork roast floating in a thin flavorless liquid. I ended up removing the roast from the liquid, pulled the meat apart, put it back in the slow cooker with about a cup of Sweet Baby Ray BBQ sauce with some teriyaki sauce added to it. That helped a great deal. Also, the meat needs to be seasoned prior to cooking. I rubbed mine in seasoning salt, paprika, pepper, & Grill Mates mesquite and it was still bland. I guess I'm just used to my meat having much more flavor than this turned out. Will not be making this again. Update -- I am updating this rating because with the changes I made the meat is delicious the 2nd day.

No Crust Strawberry Pie

I am always looking for sugar free desserts, so when I had this pie at a local diner I had to ask for the recipe. The recipe is almost the same as this one, except that the diner's recipe called for 2-1/2 C water and 4 C strawberries. I think its very good. I would never have guessed it was sugar free. I topped with homemade whipped cream sweetened with splenda. The diner put theirs in a crust and topped with sugar free non-dairy topping. Its light and refreshing and hits the spot without a lot of calories. I also have topped sugar-free cheescake with this and its delicious.

Easy Chicken Divan

Better than I thought, but I had to make changes. I took the suggestions of other reviewers and used, cream of broccoli & cream of chicken; sprinkled taco seasoning and garlic powder on chicken; and used sour cream instead of mayo. I also used cream instead of milk, hoping to kill some of the artificial taste of the soups. I also put under the broiler for few minutes to brown the top. If you use frozen broccoli, thaw and drain completely. I even hand squeezed mine to remove excess water. Since I made so many changes I rated the recipe as written as a 3 star; however, with the changes, I'd rate it 4!

Cocktail Meatballs

These were ok, but not exactly what I expected. I wanted a sweet meatball, but to me these were more tangy than sweet. I'm not sure if it was the lemon or if it was the choice of cranberry sauce I used.I would have been better off just using a bottle of BBQ sauce.

Chocolate Pecan Pie I

I cooked pie for 65 minutes and it still didn't get done in the center. The edge of the pie was overcooking so I had to stop the baking process. Ended up with a pie that was hard on the edges and runny in the middle. The actual taste wasn't too bad though. Just a little too sweet for my taste. I melted my chocolate with the butter and maybe that's what messed the baking time up. Also, it needs something other than store-bought pie crust. It was just too overwhelming. Update: ok....after the pie sat overnight, it set up a bit more and the taste is fantastic. I could eat it all before company arrives!

Creamy Au Gratin Potatoes

I just made a "test" batch of these to experiment with before my meal tomorrow. Here are some changes I made and some things I will do different. I microwaved the potatoes for about 6 minutes before slicing.I layered the potatoes and sauce adding salt, pepper, and a little garlic powder to each layer of potatoes (best to salt them while they are warm). I also minced the onions and added a few over each layer of potatoes and the remainder I put in the cheese sauce. I added more cheese and more milk to the sauce along with a salt to give it more taste. I cooked as directed, but removed foil near the end and added buttered cracker crumbs and cooked under broiler until slightly browned. After removing from oven, I crumbled bacon on the top. Next time, I will double the sauce and maybe add less flour to the cheese sauce as I felt it ended up too thick (that's why I added more milk). I'll also pre-cook the potatoes a little longer as the longer they cook in the sauce the dryer it dish gets. Update: Made these with double the sauce... Don't do it!! The potatoes came out a greasy mess. Had to to throw them out.

Southern Candied Sweet Potatoes

Delicious!! I did use mostly light brown sugar with about 1/2 cup of white sugar. The taste was wonderful. I'm serving these tomorrow for Thanksgiving. The only problem I had was that they were done a lot earlier than I expected, so they got a little softer than I wanted and since I'll have to warm them tomorrow, I'm afraid they may get too mushy. Also they didn't candy like I expected, so I added a touch of cornstarch to the juice to thicken it a bit. You can't beat the taste though!

Pork Chops to Live For

I took others' suggestions and didn't dip in the egg. However, I seasoned with garlic powder, pepper, and flour and browned in skillet. I then followed the recipe to the "t". My chops were dry and the "gravy" was not good at all in my opinion. I use a similar recipe that calls for the meat to be browned, sprinkled with dry onion soup and topped with cream of mushroom and wate and it's very good. I think the addition of the milk is what gave this recipe a strange taste.

Zucchini Pineapple Bread I

Very good and moist. I followed recipe exactly except I added about 3/4 C nuts. I know some reviewers thought there was too much sugar, but I found it to be a good amt... maybe even not enough. The recipe didn't say whether to drain pineapples or not, so I did drain and it turned out fine.

Simple Taco Soup

This was good, but nothing special. I made it exactly as written and found it to be a little too spicy for my taste (I used mild rotel). If I ever made it again (which I probably won't), I'd use black beans instead of the pinto beans and maybe kidney beans instead of the chili beans. I don't have a clue why the ranch dressing mix was added. I couldn't taste it at all.

Chess Pie

This is very similar to recipe I've used for years and that people at my church ask for frequently. However, my recipe only uses 3 eggs and 1-1/2 C sugar. It does crack a lot which I don't like. Letting it cool in the oven will help somewhat, but I believe the cracking is due to the cornmeal which forms the crust. A lot of the seasoned-chess-pie-makers I know do not include cornmeal in their recipes.

Very good recipe. I followed recipe exactly except that I used cider vinegar instead of white vinegar and I added onion powder since I didn't have enough onion on-hand. Much much better than the canned stuff!!

Peach Cobbler Dump Cake I

I was very skeptical, but this turned out delicious! I used peaches canned in their own juice and also sprinkled a little bit of brown sugar on the top before baking. I topped with real whipped cream (not the stuff in the tub) before serving. I will definitely make again .... and again......

Pea Salad

Very good and quick. I added marinated cauliflower and green peppers to mine. Also a little salt and sugar. Next time, I'll use other reviewers' suggestion like bacon and boiled eggs.
