Grandmother's Buttermilk Cornbread

Chicken Parmesan

This is pretty awesome. I used an organic marinara instead of tomato sauce, and I didn't end up needing 4 cups of panko bread crumbs. Otherwise I followed this recipe as written. This ends up super crispy and the provolone is a nice addition. I will definitely make this one again.

A Good Easy Garlic Chicken

This was great. Used olive oil instead of butter, and minced garlic/fresh onion instead of powder. The kids loved it. Will definitely make again.

Chinese Pepper Steak

I'm giving this 4 stars because I modified it just a bit. My kids have trouble with corn starch, so I made a roux and used that thicken the sauce. I also added 1 tsp of minced garlic to the sauce. I then browned all the steak before adding it to the sauce. Then I dumped the steak and sauce with the onion and cooked it until the onions were tender. I then added green and red bell peppers. I've never heard of Chinese Pepper Steak with tomatoes, so I left them out. It was really good and we will definitely make this again.

Jeff's Hot Dog Chili

This was so good. Like some other reviewers, I substituted beef broth for the water. I also used a can of rotel diced tomatoes and a full teaspoon of pepper. This was so good. Grilled some Nathan's Famous hot dogs to serve it one.

Easy Cheese and Ham Scalloped Potatoes

Really good start. Thanks to some of the other reviewers that suggested cutting the heavy cream in half. I also added about a 1/2 teaspoon of salt, pepper and chopped chives. I also topped with more cheddar cheese and parmesan cheese to create a crusted top. Very good.

Lime Chicken Soft Tacos

This was so good. I changed it just a bit. I used all the lime juice like some other reviewers, and I replaced the oregano with cilantro. I also doubled the garlic and used a yellow onion instead of green onions. Will definitely make this again.

Fajita Marinade I

This was really good. The only change I made was to add 1/2 tsp of dried cilantro. I used this tonight with beef fajitas and it was awesome. This would be a great marinade, even if you weren't making fajitas.

I liked this, but had to modify it to make is wonderful Here's what I did. I added a parmesan rind right away. I then added 1 tsp garlic powder, 1 tsp of dried parsley and 2 tsp of sugar.

Maple Salmon

This was great! Only thing I changed was to double the garlic and cut out the garlic salt. When I cooked it, I basted the salmon with the marinade every 10 minutes. Delicious!

Greek Chicken Pasta

This wasn't as good as I thought it was going to be. If I make this again, I will definitely add more feta cheese and less marinated artichoke heart, and probably will use canned, diced tomatoes as other reviewers have suggested.

Chicken Wing Dip

I think this is a great base recipe for a chicken wing dip that you can vary to what you like. Like some of the other reviewers, I like bleu cheese instead of ranch. So, I added 2/3 cup of bleu cheese dressing, and 1/4 cup of bleu cheese crumbles in place of the ranch dressing. I also used 1 cup of Frank's Red Hot instead of 3/4 cup. I'm entering this dip in a contest at work tomorrow. I expect it will do well.

World's Best Lasagna

Loved this recipe. I had to adapt things just a bit because I halved it to feed 2 adults and 3 kids. However, I used all the ingredients called for just had to adjust a few quantities. We really liked this and will definitely make it again. It didn't end up looking like the picture, but it was so good. This rivals Guy Fieri's pepperoni studded lasagna for my favorite lasagna.

Buffalo Chicken Chili

I won a chili cook-off at work with this recipe. This is really good. I used a 28 oz. can of crushed tomatoes and less tomato sauce to make it thicker. I also added black beans and used shredded chicken instead of ground chicken. Wonderful chili flavor with a nice kick. If you want to make it hotter or more of a traditional "buffalo" flavor, then add more Frank's and less Chili powder. However, it's wonderful as written.

Scott's Coast-to-Coast Famous Chicken Wings

Oh man! These were really good. I pan fried them in about 1/4 inch of peanut oil for 10 minutes per side. Much better than using an entire gallon of peanut oil and this got the wings good and crispy. For the sauce, I added 1 tsp of red pepper flakes, which for me left the wings fairly spicy. This isn't a traditional Buffalo Wing sauce, but is still really good. I liked the garlic flavor in addition to the heat from the red pepper flakes, Frank's RedHot and black pepper. I will definitely make these again.

Roast Leg of Lamb with Rosemary

The marinade didn't really penetrate the meat with this recipe. I found it fairly bland. Given how popular this recipe is, maybe I'm just not a big fan of lamb.
