Stuffed Green Peppers I
I never liked my mothers peppers with tomato paste...so I stuff peppers-( green and red ) with browned ground beef, salt, pepper and garlic, add sauted mushrooms-chopped ( and one whole mushroom poked down into top of pepper) add par-boiled rice, add a little cream of mushroom soup to hamburger mix and stuff peppers -(which have been boiled,
drained and rinsed with cold water to stop cooking, Lightly stuff peppers with meat mixture, poke a chunk of swiss cheese into middle and add a mushroom and a slice of swiss cheese to top of pepper). tastes real good. oh, and pour the rest of soup over peppers and bake in a dutch oven with lid. Note: always boil pepper first-drain,rinse with cold water, and partially cooked rice (instant rice gets too mushy)
