Ham and Beans and More

I've always struggled with getting the right rich taste from ham & beans without a flavor packet. This was SPOT ON! I had already started the recipe with beans, ham and water realizing that maybe it was too late to do anything but salt it and move on. But when I found this recipe, I simply added the garlic, chopped onion, olive oil, chopped celery and cumin and WOW! Never knew it could be this easy and good! Will DEFINITELY do this again!!!

Pumpkin Parfait

Good in a pinch! Ran short on ingredients, but used box of pumpkin pie pudding, cup of pumpkin puree and 2 cups of 2% milk and topped with whipped cream. Didn't set up but we ate it so quick maybe we just didn't give it time! Yum!

Asian Glazed Chicken Thighs

Fabulous sauce!!!!! I started adding the honey and ran out, so substituted the rest with brown sugar. WOW! Whole family kept complimenting this recipe so I will definitely be making this again! Surprisingly, can't taste the vinegar!

Asian Ginger Dressing

Followed other suggestions with using half the soy sauce, no water and half olive oil w/half sesame oil and really liked it! Instead of mincing the garlic, I pressed mine and also doubled all the ingredients into a quart sized jar. Really yummy!

Hamburger Supper

Needed a hamburger recipe since we were tired of burgers and tacos. Made this gluten & dairy free using an envelope of onion soup mix instead of gravy mix, dairy free cheddar cheese slices and added corn elbow macaroni instead of potatoes (husb has high glucose and tators are a no-no). Carrots and onions looked nice and whole family enjoyed. Will be making this again!

Hamburger Supper

Sweet Hot Mustard Chicken Thighs

Made this recipe for my family with boneless, skinless chicken thighs and they just loved it - we left out the chipotle and cayenne due to personal preference. They raved over the onions and couldn't stop talking about it! Definitely be making this again!

Chocolate Zucchini Bars

Loved it! Did try a healthier version with whole wheat flour, coconut oil for butter and cinnamon applesauce for oil and cut back sugar to one cup. Yummy! Think will try almond flour next time!

Jay's Signature Pizza Crust

This has been my "go to" pizza crust ever since I found it on this recipe website and it always gets GLORIOUS reviews by friends and family! As long as you have fresh yeast, this recipe will NEVER FAIL YOU. Crunchy on the oustide and chewy on the inside YES! First time I made it, seemed strange that just after mixing it, the dough actually "poured" out of the mixing bowl and onto my floured surface - but don't worry, after it rises and you press out on a pizza stone it will be GREAT! Pizza will be very thick, so consider dividing in half for hand tossed thickness like at pizza parlors - otherwise BEST PIZZA DOGH EVER!

We tried this marinade exactly as written, but it was definitely TOO SPICY for us! Will try again but may only add a tsp of the hot sauce - it was definitely TOO HOT!!!!

Garlic Chicken

Family loved this recipe! Had a couple over for dinner and wife said she wouldn't normally have chosen a garlic chicken, but that she was pleasantly surprised at how good this was! Used jar minced garlic with olive oil, refrig powder parm and Italian breadcrumbs. Will definitely use this recipe again!!!!

Asparagus Cashew Rice Pilaf

OMG! My whole family couldn't keep from complimenting this dish! I followed the suggestion of others and reduced the butter to about 2 TBL, didn't have jasmine rice so used regular white rice, used salt free garlic & italian seasoning since didn't have garlic and chicken broth (from bouillon) instead of vegetable broth because didn't have any. The fresh boiled asparagus pieces and cashews made this recipe fabulous! Used half cup of chopped onion but omitted the extra salt - still came out fabulous! Family of 5 enjoyed and 2 family members took 2nds - so yeah, could have been made for "8" but hubby said double recipe for leftovers would be appreciated in the future!!
