I love presentation, so colorful casseroles (Mexican & Chinese cuisine) and meals with leftovers for lunch the next day!
My favorite family cooking traditions
My mom didn't cook a lot, but my husband's mom always did it up right. Chicken w/noddles over mashed potatoes, Cooked Shredded Wheat w/poached eggs and Taco Salad are our stand-bys

Ham and Beans and More
I've always struggled with getting the right rich taste from ham & beans without a flavor packet. This was SPOT ON! I had already started the recipe with beans, ham and water realizing that maybe it was too late to do anything but salt it and move on. But when I found this recipe, I simply added the garlic, chopped onion, olive oil, chopped celery and cumin and WOW! Never knew it could be this easy and good! Will DEFINITELY do this again!!!

Pumpkin Parfait
Good in a pinch! Ran short on ingredients, but used box of pumpkin pie pudding, cup of pumpkin puree and 2 cups of 2% milk and topped with whipped cream. Didn't set up but we ate it so quick maybe we just didn't give it time! Yum!

Asian Glazed Chicken Thighs
Fabulous sauce!!!!! I started adding the honey and ran out, so substituted the rest with brown sugar. WOW! Whole family kept complimenting this recipe so I will definitely be making this again! Surprisingly, can't taste the vinegar!
