B.L.T. Salad with Basil Mayo Dressing

Loved this salad. I will be using it often. The homeade croutons really add something special. I used BF reduced fat mayo to cut the fat some and it was great. I highly recommend it.

Mom's Best Waffles

These waffles were quite good. Light and fluffy. The batter was thinner than I was used to so the first batch I overfilled and it overflowed the waffle iron. As noted by a few others I added 1 tsp vanilla and also added some chopped pecans. Yummy!

Slow Cooker Chicken and Dumplings

This was delicious and super easy. This is a must for everyone's recipe box for when you are pressed for time in the evening. Next time I make it I will cut down on the onions a little.

Elegant Orzo with Wilted Spinach and Pine Nuts

Very good. I had no fresh spinach so I used frozen, thawed and drained. I also added cooked chicken to make this a main dish. For a side I served bruschetta. Awesome meal with a nice glass of white wine. There are only 2 of us and this recipe makes a lot. I've frozen the leftovers. Another yummy meal later in a snap. Thanks for the recipe.

Easy Slow Cooker French Dip

This is a HIT! I made it yesterday and my family devoured it. We can't wait to eat the leftovers. The only change I made from the original recipe was that I used tri-tip instead of rump roast. Tri-tip was on special, plus it is usually better anyway.

Sea Bass with Honeyed Apples

Anything voted keeper by my husbands standards gets a 5 with me. The only changes I made were the type of fish. The market had no sea bass and the halibut didn't look good so I ended up with sole. I also added chopped pecans to the apple topping. Quite tasty!

Zucchilattas

After reading other reviews I made a few minor changes and absolutely loved this recipe. First I only made 1/2 the recipe. I cut down on the tomatoes a little, added some salsa, cumin, and seasoning salt. After cooking I also topped w/ a little light sour cream. I am always looking to cut fat so I used an 8 oz pkg of the reduced fat mexican cheese mixture and it was plenty in both amount and flavor. As other said, use a slotted spoon.

Cranberry Bars

Very good and easy too. I didn't have any whole cranberries on hand, so instead of making the craberry filling I actually used canned whole cranberry sauce. It worked just fine. This is a great one to add to your baking gifts for the holidays.

Gourmet Chicken Sandwich

This was absolutely delicious. A couple of notations I might add. I used lowfat mayo and it had plenty of flavor. Also I grilled some red pepper and red onions in butter in a separate pan and added it on top of the chicken. For the size bread I had there was only enough spread for 2 sandwiches. I would recommend doubling the spread. We will use this often.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are exactly as the name implies. If you like your cookies, big, fat and chewy you will love these. I used them in some baked food gift baskets. They're awesome. My whole family loved them. This will become our chocolate chip cookie recipe of choice.

White Chocolate Chip Pumpkin Cupcakes

Made this last night for our New Year's celebration with a few revisions. First I used Yellow cake mix instead of white because I had it on hand. Also used mini semi sweet chocolate chips instead of white, again because I had on hand. Instead of making as cupcakes I made a bundt cake instead. Took about 42 minutes to cook. Instead of canned frosting I made a lowfat cream cheese frosting and drizzled it on top. This was super moist and very delicious. I like that it used egg whites and had no added sugar into the recipe as many others did that were similar. I try to keep my cooking on the lighter/lowfat side. Because of the pumpkin you could probably do without adding the oil. I may try that next time.
