Day Before Mashed Potatoes

I made this twice over the holidays and it worked out great. Having the potatoes prepared in advance is a big help. Thanks for a great recipe.

Spicy Squash Casserole

I have a finicky 14 year old daughter that will not eat vegetables, so I am always trying to come up with creative ways to sneak them in. This worked. Instead of slicing the squashed I grated it in the food processor to make it even less noticeable. I also substituted 1 can of diced green chilies instead of the jalapeno's, because my family doesn't like things too spicy.

Cranberry Bars

Very good and easy too. I didn't have any whole cranberries on hand, so instead of making the craberry filling I actually used canned whole cranberry sauce. It worked just fine. This is a great one to add to your baking gifts for the holidays.

Dynamite Bourbon Ribs

We eat Jack Daniels ribs at TGI Fridays so that's what I had in mind when I made these. I ended up being a little dissapointed. I was expecting a thicker sauce. They were OK, but just not what I had expected. I probably won't make them again.

Slow Cooker Manly Stew

This was very simple and tasted pretty good. I'm sure it would be great over mashed potatoes, but I didn't want to take the time so I served over egg noodles. The beef chunks of stew meat were too big, so for the leftovers I shredded the beef in my food processor and I liked that much better. This recipe made so much, that I not only fed my family but took it to my neighbors to have as well.

Mexican Lasagna

This was so simple and it tasted good, so that means it is a keeper. As stated by a few other, I added olives over the meat and after cooking dalloped with sour cream.

Amanda's Sangria

I thought this recipe was quite good but there are a few things I will make special note to you of. I put the cloves in the apple slices as suggested, but I think I put far to many. Next time I would just use a few. Also I thought it tasted better to fill the glass about 1/3 full of wine mixture and 2/3 with soda. This is a very light and refreshing drink. Very pretty in a glass pitcher w/the fruit pieces.

Easy Slow Cooker French Dip

This is a HIT! I made it yesterday and my family devoured it. We can't wait to eat the leftovers. The only change I made from the original recipe was that I used tri-tip instead of rump roast. Tri-tip was on special, plus it is usually better anyway.

Cherry Chicken Salad

I felt this chicken salad recipe was just OK. When we ate it for dinner for the first night it was a little dry. The next day I added some more mayo and a little sweet pickle relish and made sandwiches and it tasted a little better. I probably will not make this again.

Barbeque Halibut Steaks

This was very good. My husband and I both liked it. As suggested by others I doubled the marinade and would highly recommend it. In fact next time I may triple to have enough to drizzle on after putting it on the plate.

B.L.T. Salad with Basil Mayo Dressing

Loved this salad. I will be using it often. The homeade croutons really add something special. I used BF reduced fat mayo to cut the fat some and it was great. I highly recommend it.
