Butternut Squash Soup II

I really Enjoyed this recipe! After reading the reviews, I made some modifications to the original. I did not use celery. I did not sautee the vegetables in butter. I cut up the butternut squash, baby carrots and a medium to large sweet potato and put them in a baking dish, drizzled them with olive oil and roasted them on 450 for 1 hour. Once the vegetables were done, I sauteed a medium sweet onion and one clove of garlic in olive oil. Just until the onions were soft. I added the roasted vegetables, onions, garlic and chicken broth in a large stock pot. I added nutmeg, black pepper and cinnamon. I simmered until vegetables were truly soft then pureed in a blender (well, my ninja, but you get the idea!). The soup can be as thick or thin as you like, just add more chicken broth and seasonings as needed. I served with a dollop of sour cream and was totally surprised at how delicious it was! Thanks so much for posting this recipe! I've been trying to figure out more ways to incorporate vegetables into my diet!

Fast and Easy Pancakes

Great, quick and easy recipe! I followed one of the reviewers and used just 1/3 cup of sugar. I also did not have enough regular milk, so I subbed vanilla soy milk. Worked out perfectly!!!! Will defintely use this recipe again!!!!

Easy Peach Cobbler II

My coworkers LOVED this cobbler! It is very easy to make. I used only 1 cup of sugar and added a little nutmeg and cinnamon to the melted butter mixture. I also added grated pecans on top before baking. Fabulous recipe!

Italian Amaretto Margaritas

This margaritas were amazing! You definitely have to blend with ice though - it's very concentrated. I put the entire pitcher in the freezer. It was cold, slushy and DELICIOUS!

Lentil Soup III

I LOVED this recipe! I ended up using 2 large cans of chicken broth, added fresh spinach and also added some black and white pepper. I barely changed the recipe. It was wonderful! This recipe will be a staple for me!

Pork Chops to Live For

I loved this recipe! Of course, I tweaked it a bit. Here are my tweaks/suggestions: 1. I did not use flour or eggs when browning. I just seasoned and browned in olive oil 2. I used WAY less milk. Probably about 1/2 to 3/4 cup 3. I used one can of cream of mushroom soup and one can of cream of potato 4. I used Vidalia (sweet) onions - 1.5 to 2 5. I added fresh garlic and sliced potatoes on top of the pork chops The leftovers were even better than the original. It had time to "marinate"!

Best Ever Chicken Casserole

This was a fantastic recipe! I used the basic recipe (for 6 servings) and added a few "twists" of my own. I sauteed the onions, water chestnuts, fresh garlic and mushrooms together. I also boiled the chicken with some fresh garlic. When I mixed everything together, I added a little less mayo and made up for it with a little more cream of chicken soup. I used all of the corn flakes in the mixture and just add more for the topping. I also added a layer of grated parmesan before the layer of corn flakes on top. My family and houseguests LOVED it!!!! I will definitely be making this again. Thank you!
