I ended up needing to add more liquid to the soup since I put in too many veggies. I would recommend just adding the pasta to the soup to cook since separating it turned out to be inconvenient. I also would suggest adding any fresh herbs at the very last so they don't cook to a slimy texture.

Cajun Roast Beef

Excellent Flavor! I doubled the ingredients and used a 3lb roast. The roast was cooked for 6 hours on low and I used a meat thermometer to get it to medium done. Excellent advice in the comments to use the meat thermometer to gauge things.

Hummus III

Too much tahini for my taste, but the recipe as a whole is easily modified to taste. Next time I will only use two tablespoons tahini per two cups chickpeas.

Spanish Chicken and Rice

I will make this again with some tweaks. I would recommend using a long grain rice rather than the medium grain rice I used. I also would recommend using twice the amount of rice and its associated ingredients. Spices need to be increased especially the chili powder 1/8 tsp isn't enough to give it much flavor. I agree with prior reviews which said it needed cayenne. I will skip adding flour/salt/pepper in the beginning and just add salt/pepper. Breading only made a mushy slime on the outside of the chicken for me. Excellent concept, will attempt again. Thanks.

Potato, Broccoli and Cheese Soup

Flavor was OK. I cooked the broccoli with the potatoes per the comments to simplify. I then used an immersion/stick blender to puree and the end result was a grainy mess rather than smooth. I will not make this again, but this is partially due to my tweaking not working out.

Chicken Jalfrezi

Excellent! Per prior reviews I cut the salt, but all other spices were as listed. In the last step where you add the cilantro, you can add other soft vegetables such as red bell pepper or yellow/zucchini squash to bulk out the dish. In addition, the steps I used were to saute the onion and garlic, then add all spices except the cilantro and saute them for 1 minute. I then added the chicken and followed the rest of the recipe. Thank you very much for this keeper.

Hungarian Goulash III

This was very yummy. I had some potatoes to be used up, so I served this with mashed potatoes per another reviewer's suggestion. I had to cook the sauce down until it was thick with the pot uncovered to make it perfect. Thanks for the recipe!

Real Hummus

As per the original cook suggested, I used cumin and no black pepper and cut the salt in half. It was still too salty. I will eliminate the salt next time.

Stuffed Mexican Peppers

I used a homemade taco seasoning in this recipe and it turned out like I expected with amendments to the taco seasoning as specified in the recipe. The only issue I had was with the bell pepper skins. I may try roasting and skinning the peppers next time. Thanks for the recipe!

Baked Teriyaki Chicken

Greek Pasta Salad

Butter Chickpea Curry

I have tried multiple curry seasoning types in an attempt to make a good Indian vegetable curry. This is the best I have tried. I will definitely make this again. I used all spices an sauce ingredients as listed, but added a variety of vegetables that I just happened to have on hand. It is an excellent building block recipe to be used with any vegetables you prefer. Thanks very much for this keeper!

Fresh Guacamole
