Stuffed Fish in Puff Pastry

Just okay. Fillets needed seasoning and the stuffing overpowered the delicate fish. Lovely presentation however.

They were good cookies, the typical recipe for snickerdoodles. No special ingredients. Be careful not to overcook. Better texture was achieved by chilling the dough

Pecan Tassies

These are sooo good. The dough does need to be chilled for atleast one hour for handling reasons. But please use real butter instead of the fake stuff. Be careful when removing from pans, use a knife and try to twist them out.

Cranberry Pork Roast

This was odd. Between the meat in a crockpot taste, and the "I cant quite identify anything in the sauce" going on. Over potatoes? NO WAY unless you like an overly sweet sauce with your vegis. Will not make again not even with changes.

Banana Cake VI

I always make a recipe the first time without any changes. This was "country good", however this is more like a light banana bread in texture than that of cake, REAL HEAVY. By the second day we scraped the frosting off and just ate the cake. As with all cakes I bake 300 degrees seems to make a more tender cake. This batter goes from jiggly center to done quickly and may need more oven time than the recipe called for.

Frog Eye Salad

This is a wonderful recipe. However it is very addictive. Children like it as long as you use a different name and omit the coconut. The only change I make is, I boil the pasta in pineapple juice, this helps with the blandness of the pasta.
