I'm not very good with a rolling pin, but once I got the hang of that this was a very good recipe. I iced them with. a simple icing of conf. sugar, butter and lemon juice. It was a very unique and tasty flavor combo. The cookies themselves stayed tender for several days (up to 10 days), as long as I kept them in a sealed container. I did add a bit more cinnamon and ginger and the flavor was still relatively mild, which was good for a 3 year old. Great cookies overall!
