On my first visit to the blogosphere..we will address desserts & doubling their recipes.

Over the last few weeks, I have been excessively using the target="_blank"> "Outrageous Chocolate Chip Cookies" recipe by Joan to supply a nightly dessert for me and my husband, who has been rightfully named "the Beast" by my family.  I have halved the recipe, as to not overindulge.  When that didn't work out well (too runny), I just started making the whole recipe and just making the batches a couple of times a week.  NOW we have the need to double the recipe.  I always get scared and mess up going outside of recipe lines, as I am a rule-follower, almost to a fault.  Upon my quest to find general rules of doubling recipes in desserts, I didn't come across any tried and true way.  However, I did come across a custom version of the recipe posted by '2 yummy'...so I will use her doubling of sugar, egg, & flour measurements to attempt to recreate the best cookies ever x 2.  Wishing my mom was just here so I could have her come help! And if you experts out there have any hints or rules on doubling, PLEASE COMMENT!!

Will return with the outcome and results.  The second batch I'm sure will be gone in a day, as that is for home.  The 1st batch is for my husband's best friend's father who is very ill.  Hopefully this batch will make some miracles happen for this family!

My cooking triumphs
Wowed a family I just married into by hosting Christmas in our 2 bedroom apartment. The meal was complete with a whole-roasted champagne turkey, green bean casserole, stuffin muffins, cheesy potatoes, chocolate chip cookies & cheesecake. we also have a monthly family dinner that's pitch-in and they may be just trying to make me feel good, but I seem to always get GREAT reviews for food I bring - Chinese Salad one month, slow-roasted shredded chicken & guacamole for another month...YUM!
My cooking tragedies
Ooo...1000 characters is not enough :) I typically will need to make toast for bruschetta or open-faced tuna sandwiches 2 - 3 times because I ALWAYS lose track of 'broiler time' and things are singed in 2 minutes! Besides that, my husband is now the resident meat checker - I NEVER know when meat is done...I just don't want to get mad cow disease!!! :) It is also widely known and accepted that I CANNOT make a pot of coffee, thus we now own a Keurig :)
