Pumpkin Waffles with Apple Cider Syrup

Yikes. I do not get what all the fuss is about. I followed the recipe exactly. It was not flavorful. I would say in fact that it was bland. The waffles were dense even though I definitely added the egg whites correctly-- I can only imagine what they would have been like otherwise! Also, there are so many dried spices added that the flavor is almost chalky. I need to stop writing this review before I change it to a 1. Thinking about the texture is really bothering me!

Creamy Pesto Shrimp

THIS IS NOT THAT GOOD. It is totally not worth how unhealthy it is. Yes, cream, butter, shrimp, pesto, pasta, and cheese are tasty. But this came out tasting like cream, butter, shrimp, pasta, and cheese with a hint of pesto. To me, a recipe that includes ingredients like that should add up to more than the sum of its parts, not add up to me being kind of grossed out with myself for eating it. Also, the consistency of the sauce was not good. I think part of the problem is that there is too much butter. I would guess (and won't find out since I won't make this again) that about half the butter would serve just fine if you have to try it.

Artichoke Spinach Dip

The missing ingredient: LEMON JUICE. I agree with another reviewer that when you have to change the recipe a whole lot, it's not a five star recipe. But with the changes I made, I would give this SIX stars! - I sauteed three garlic cloves and about two tablespoons of finely chopped onion with the butter - I used twice the artichokes and chopped them pretty small (like 1/4 inch to 1/2 inch pieces) - I used the full amount of cream cheese and sour cream-- half the amount looked disproportionate to all of those artichokes - I used kosher salt. mmm. - when I added the sour cream and cream cheese, I squeezed the juice of one small lemon into the mix. I figured the blandness indicated the need for a bright flavor. I really think that lemon juice was just the thing. Ours was tangy, creamy, and delicious.

This was just ok. Plus, he calorie count is ridiculously wrong-- it says this makes 12 servings, which it does not, so it's not as healthy as it looks either. I would say it makes 4, maybe 6 servings. It's definitely not worth 700 calories (or more) a serving.

These are good with all kinds of preserves/jam. I add a little vanilla to the dough, too. I am going to make a bunch and freeze them so we can just grab them and run in the mornings.

Vegetable Pizza Squares

Wow, this was great. However, I did follow others' advice: I used lots more vegetables, and I added carrots but omitted cauliflower. I think I used more cheese, too. I think this recipe calls for a small pan, but I used a bigger pan and stretched out the dough rather than having thick dough. Mmmm.

Amazing Italian Lemon Butter Chicken

I have a love/hate relationship with this recipe. It has so many delicious ingredients and the final product, after significant recipe alteration, is yummy, but let me start by saying no way is this recipe ready after 30 minutes. No. Way. Impossible. Second, the recipe does not specify whether the bacon should be cooked when you put it in or raw. I opted for mostly cooked in my microwave before I dumped it in the pan-- thank goodness, or either it would have been raw or everything else would be toast. Third, if you make it as the recipe describes, it will be ridiculously greasy. I used about half of the butter and one less T of cream and drained and wiped out the pan not only after cooking the chicken, but after cooking the mushroom mixture as well, but it was STILL greasy! I can only imagine what it would have been like. After all that, it was good, much like the restaurant recipe I think it's trying to replicate (despite the story about the old lady)... It wasn't any harder to make than it sounded, but I could tell it was not a half-hour recipe. Well... I hope that this long recipe review was helpful. The end product was good, but the recipe needs major revisions for it to be tasty and/or match the cooking time.

Easy Paella

My wife made this for me for father's day and it was excellent. I love paella but I'm allergic to shellfish, so it was nice to find this recipe. She followed the recipe exactly and didn't experience flavor-blending or dryness problems that were mentioned by another reviewer. We will definitely make this again, soon.
