Sopapilla Cheesecake Pie

Excellent! I followed a prior reviewer's tips adding another 8 oz cream cheese, 1/2 c. sugar, and 1/2 teas vanilla to filling. I melted 1/2 c. butter pouring to cover the top crescent layer, then the sugar/cinn mixture. I baked 35 min & drizzled the honey overall. Took to a baby shower where it was devoured and I was asked for the recipe by several different people. YUMMO!!!!

Three Cheese Garlic Scalloped Potatoes

Wonderful potatoes! Only change was I doubled the garlic (as we love it). Be sure to slice all potatoes very thin so they cook through evenly. The browned, cheesy topping is marvelous! I did use the suggested sharp cheddar, fresh grated parmesan & provolone. Went great served with the Roast Sticky Chicken-Rotisserie Style (from this site), nice green salad, sliced tomatoes, and fresh french bread with butter.

Roast Sticky Chicken-Rotisserie Style

This is a super easy, wonderful recipe for chicken. We had it on vacation - served it with Three Cheese Garlic Scalloped Potatoes (from this site), nice green salad, sliced tomatoes, and fresh french bread with butter. YUMMO!!! Great as leftovers too!

Toasted Coconut, Pecan, and Caramel Pie

This pie was great - both chilled in fridge and my fave, frozen. Made it the first time for my mother's birthday when relatives were in town. Also, brought one of the two pies to work. Everyone loved it! Gentleman at work asked for the recipe. Family said I had to make it for the next holiday get together.

Baked Fruit Dip

I thought this dip was excellent and I was looking for something different..out of the ordinary to serve to a group. This definitely fit the bill and everyone who tried it seemed to like it, but I have served other dishes with better reception. I'm giving it a 4 since it wasn't received as well, but I do think it's special.

Whole Wheat Pancakes

My entire family loved these. Yes, the batter is a bit thin, but just follow the instructions.. cook and eat instead of worrying about the consistency before cooked. My daughter and I needed to put more fiber into our diet and this is a great way to do it. We all love pancakes! I've made the recipe twice and they do freeze well and warm up well in microwave. Made ahead for a long camping trip the 2nd time and just zapped them a bit when ready to eat. Great!

Mostaccioli with Spinach and Feta

This pasta dish was great! I too love all the ingredients, but had never put them all together before (especially the feta and spinach). It was super easy and sooo very tasty for the entire family, even the kids. The only change I made was to add extra garlic just because we are garlic lovers to the extreme. Excellent!

Basil Shrimp

AWESOME!!!! I used jumbo shrimp, double butter, lemon pepper (didn't have a lemon), spicy brown mustard, dried basil, added a bit more garlic powder, about 6 drops of hot sauce, and a little crushed red pepper; marinated for about 3 hours and grilled on skewers with charcoal & hickory chips for approx 10-15 minutes. Whipped up some fettucine and olive oil and seasonings for the leftovers (the few there were) and hid it for MY lunch the next day! OH MY GOODNESS!!! You have GOT to try this one!!

Slow Cooker Western Omelet

Yes, this recipe was very simple.. the hardest was chopping the pepper, onion & ham. Great having breakfast ready when you first get up. I would like a little more stovetop, browned flavor, but then I find that true with many slow cooker recipes I've tried. It gave a pretty appearance as I substituted green onion for white and red bell pepper for the green. Would probably look nice for a Christmas morning breakfast.

Toffee II

This one was pretty good and fairly simple, but one does have to be sure the pan you put it into is not a glass one. You can use even a cookie sheet, and without even chilling it, and once it has cooled and the chocolate is set you just sort of twist the metal sheet and the candy will break into pieces. You can hit it with a hard knife, spoon, or other utensil if the pieces are large and you want to make them smaller. Just a tip I use when I make any hard candy. I also like to put some chopped nuts (preferably pecans) on top of the melting chocolate.

Absolute Mexican Cornbread

I thought this cornbread was great! It was easy to make; my young daughter helped. My co-workers loved it and wanted the recipe so they could make it at home. I'm looking forward to having this with homemade chili next time!

Upside Down Caramel Apple Pie

I would say to all the people having problems with the bottom almost burning or overcooking/sticking to pan, I had the same problem, but I am sure it's because I melted the margarine in the pie plate before putting the pie together. I attributed the problem to the plate starting out warm and thus getting the bottom ingredients too warm to begin with. Melt the margarine in a separate dish and then mix it in a cold pie plate and continue with directions. I think you'll have better luck.

Fried Apples

I'm going to stay with my own recipe. The vegetable oil is a very bad idea.. use the butter or if you're health conscious use a light margarine. Instead of pouring maple syrup on at end, just make your own; it's better. Put your apple slices in the pan, put maybe a tablespoon or so of water, add either white (my preference) or brown sugar to your taste.. I usually cover the apples, sprinkle with cinnamon & a little nutmeg to your taste, and at least 2 tablespoons of butter. Cover tightly and cook on low heat until cooked down to your liking. Serve with warm, buttered toast.. my daughters love to put the apples on their toast and take bites of it together. Love this!

Lemon Pepper Pasta Seafood

Made 2 times over weekend.. once with salad shrimp and once with shrimp and fresh crabmeat; used fresh chopped scallions and garlic powder (lots since we love garlic) and both batches disappeared quickly! This one's definitely a keeper!

Grilled Sausage with Potatoes and Green Beans

My family loves it all! Fixed it over the weekend on a camping trip and it went down easy. I used an even pound each of green beans, potatoes and sausage.. probably should have doubled the sausage amount, also. The recipe seemed like it would be a good one so I made a double batch and tried one over an open fire and the other in a covered mini Weber grill. The open fire batch I cooked for about 30-35 minutes.. some of the green beans and the potatoes were still a bit crunchy. The other batch I left in the Weber covered for about 45 minutes.. it came out perfect; the sausage actually browned a bit and the green beans and potatoes were perfect. I also sprinkled a pinch of Greek Seasoning overall when seasoning (just because I love that seasoning mix) and all in all I'm sure we'll have this many times more. Thanks for the great recipe!

Pineapple Upside-Down Cake VII

My family loved this one! I wanted to share some with my parents, but one of my daughters would not let me... she wanted to keep it all to ourselves! My only problem was I also baked it about 15 minutes longer than the box said and the very center still came out gooey/doughy. Maybe this is because I did not use the iron skillet; I just used a light-weight aluminum 9x13 pan. Other than that, it was just perfect!
