Mediterranean Stuffed Chicken

YUM-MY!!!! We all loved this dish! To the stuffing I added about 1 Tablespoon of Pesto-instead of the dill and 1-2 teaspoons fresh garlic instead of the garlic powder a few shakes of red pepper flakes into the mix. I seasoned the chicken really well (I did what a lot of people have done and just made a "pocket" for the stuffing.) I put sliced mushrooms on top of the chicken, 1/2 lemon juiced over everything, poured some extra virgin olive oil over the top seasoned and popped in the oven for about 40 minutes. This was AWESOME over Linguini I poured the sauce that was in the bottom of my chicken dish over the pasta-PERFECT!!!

Honey Baked Chicken II

with a few changes this is a 5 star-the main thing is cut the butter in HALF! I halfed the curry and added a few shakes of hot pepper sauce. I also did as others have stated and just turned the chicken every 15 minutes. My husband had 4 pieces!!! (I had three-but we will keep that between us SHHH!!!) LOL! Thanks for a GREAT recipe!

Pumpkin Pancakes

I must give this a 5 star, even though I had to change the amount of milk by almost a cup and add an extra egg, it is a VERY tasty meal! My kids LOVE this and it is so simple to make! I have made this about 8 times in the past 2 1/2 weeks! =-) THanks for the great recipe!

Banana Cake Cookies

This is a very quick cookie to make! My kids devoured them! I put the icing in a Ziploc bag and the end off to drizzle over the top-I am going to use this recipe for when it is my son's turn to bring a treat to preschool and write each childs name on the cookie with the icing! =-) Thanks for a great recipe!

Pizza Dough II

WOW!!! My family LOVED this dough! I made Stromboli for lunch and Pizza for dinner one day made a crisp tasty crust- the second day I made Scones with honey butter and the third day I made fried up scones and made a taco salad on top! What an easy versital recipe- I am out of wheat flour so I use all purpose in place of it and used honey in stead of sugar other than that everything stayed the same FANTASTIC!!! The best part of it is getting 4 great meals out of making dough once!!!!=)

Exquisite Pizza Sauce

GREAT Sauce!We loved the taste of this sauce! I left out the anchovy paste and I had ran out of tomato paste so I used a can of tomato sauce in place of the paste and water-I used this for Stamboli and Pizza WE LOVED it and it is soooo easy Thanks!

Caramel Snack Mix

YUMMY!!!To the brown sugar mix after the butter had melted I added a teaspoon on cinnamon and a teaspoon of vanilla- I used Honey Nut Chex for the cereal added popped popcorn in place of the nuts (my kids won't eat them) and after the mix had cooled I added M&M's for color and peanut butter chips as well-TASTY!!!! =)

Honey Roasted Red Potatoes

These were GREAT! If hubby knew that I had put honey in it he wouldn't have eaten these (he still doesn't know)he thought they were great I thought they were AWESOME! I did add garlic powder, extra pepper, onion powder and I only had the creamy honey(so I used that) and a little extra butter-which turned out to be a good move or the potatoes would have been to dry for our tastes-THANKS for a great recipe that I would have NEVER thought to try!

Shrimp Chowder

This was great-My kids even loved it!! I changed a few things I boiled the cubed potatoes in chicken stock until fork tender I used 3 cup of potatoes-like others added 1 tablespoon of Old Bay seasoning-added 1 can of corn-1 cup chicken stock an additional cup of milk and a few drops of Tabasco. I also served them in bread bowls GREAT RECIPE! I took some to my sister at work and her co-workers had her call me to ask where I bought it because they wanted it for lunch too =)!Thanks!

Homemade Wonderful Bread

WOW!!! What wonderful bread! I upped the sugar to 1/3 and used 1/4 cup warm milk-like another poster since I am out of dry milk-and used 1/4 cup extra water. I must say this recipe is SO easy and I don't have a bread machine! Once the dough had risen once I punched it down and halved it making two loaves of bread-one loaf was eaten so fast no one wanted to eat the main course for dinner they wanted more bread! Soft crust-delicious taste- and super easy! A definite KEEPER! Thanks!

Oregon Salmon Patties

I made these last night for dinner-I used onion powder so my kids would eat it and I added cheese when done I topped with a little lemon juice and served with cheesy mashed potatoes and green beans.Yummy.

Apple Cake III

My family LOVED this! I didn't have a yellow cake mix on hand so I used a Spice cake and added a little nutmeg to the topping as well-I also left out the nuts since my kids won't eat them. YUMMY! I am excited to try this with the yellow cake mix as well!
