Homemade Dog Food

I think this is a really nice base recipe, but that tweaking it a little is a good idea. I stuck with the brown rice and ground turkey, but left out the rosemary, as I don't think it's necessary. For vegetables, I added diced sweet potatoes, which I boiled and then mashed afterward for easier consumption. For calcium, I added a couple spponfuls of fat-free, plain Greek yogurt. My 10 year old Chihuahua-Jack Russell mix went wild over this. You can also substitute the ground turkey for boiled chicken breast, which can be shredded after cooking.

White Chili with Ground Turkey

This recipe was pretty good. I ended up cooking the ground turkey and then throwing it all into a crockpot on low for a few hours. However, it was more like soup than chili, as it was very thin.

Eggplant Parmesan with Fresh Basil and Smoked Mozzarella

Great recipe! Unfortunately, my store didn't have smoked mozzarella, but I used fresh and it was still good. I took another person's advice and dipped the eggplant in flour before the egg/milk mixture. It helps the breadcrumbs stay on!

Oven Baked Zucchini Fries

These were pretty good and fairly easy. I think calling them fries is a little misleading though. Mine were still mushy and barely crispy at all.

Peanut Butter Cup Cupcakes

These cupcakes were great! They were super moist and a nice alternative to regular cupcakes. I found that 22 minutes was the perfect amount of time. I also didn't have shortening, so I just used 6 tbsp of softened butter and they still tasted amazing.

Banana Oat Muffins

These muffins were pretty good, but not as moist as I had hoped they'd be. I think the addition of the oats added to the dryness, so next time I'd either cut the amount of oats in half or omit them completely. I added some chocolate chips, which I thought were a great addition. Walnuts would be nice too!

Holiday Chicken Salad

This was great for a light summery dinner. The serving size seemed off though. We used two chicken breasts and it made about 4 servings. I also added finely chopped carrots, which I thought was a nice addition.

Magic Cookie Bars from EAGLE BRAND®

I remember having these as a kid and absolutely loving them. They're very sweet, but good if you're into that. I think they could've stayed in the oven a little longer, but they still came out well.

Shrimp Fettucine

This recipe was really, really good, but I'm only giving it 4 stars because I tweaked it a little bit. Rather than using fettucine, I used linguine. I also cut down the butter by half and used 1/4 cup of butter and 1/4 cup of olive oil. This was VERY buttery, so I can't imagine using as much as the recipe called for. I also added some chopped up grape tomatoes and parsley flakes towards the end. Very good!

Campbell's Kitchen Tuna Noodle Casserole

I really liked this recipe. I omitted the pimentos since I didn't have any and used 1 cup of frozen vegetables (peas, carrots, corn, and string beans) rather than just frozen peas. I also added half of a diced onion. Easy and delicious!

Awesome Slow Cooker Pot Roast

What a great recipe! The roast I used was just under 2.5 lbs and it came out very tender after cooking on high for 4 hours. I took the suggestion of another reviewer and used only 1 can of soup and 1/2 a can of water. I also quickly seared all sides of the meat before putting it in the crock pot. I would highly recommend this recipe! I served it with a side of roasted vegetables.

Lemon Cupcake with Blackberry Buttercream

The buttercream was great (I used strawberry preserves), but the cake portion of the recipe seemed off. The cakes didn't rise at all and I was left with flat-topped, burnt cupcakes. I had to trim them quite a bit and thought they'd surely be a disaster. Thankfully, I was able to hide the mess with a lot of frosting. I'd use the frosting recipe again, but not the cake one.

Easy Valentine Sandwich Cookies

These cookies were a lot of work, but pretty good. They came out a bit crispier than I would've liked, so I'd probably keep them a little thicker next time. I took another reviewer's advice and lightly dusted the rolling pin, the dough, and my work surface with powdered sugar instead of flour, which was nice. I'd only make these again if I had a lot of time and didn't mind cleaning up afterward!

Cream Cheese Frosting II

I love cream cheese frosting and this one was very good. I'm giving it 4/5 stars though because I found that it called for a bit more powdered sugar. I used 2.5 cups instead of 2. I think even 3 would have been okay. I used it on a carrot cake and it was delicious.

Sam's Famous Carrot Cake

This recipe was labor intensive and required a lot of ingredients, but it was well worth it! I followed the recipe exactly (minus the pineapple because I forgot. Oops!) and it was great. I divided the batter into two 9" round pans, baked them for about 45 mins, and ended up making a layer cake with cream cheese frosting. Amazing recipe!

Southwest Chicken

This dish was extremely good! I cut the chicken into bite-sized pieces rather than using whole breasts. Per other reviewers' suggestions, I added a lot of seasoning (salt, pepper, cumin, chili powder, and oregano), which I think was crucial to the dish. I served it with Spanish rice. It was so easy and healthy that I would definitely make it again.

BBQ Chicken Crescents

I made these tonight and they were very nice and filling. I cooked 2 chicken breasts in my crock pot for 6 hours on low, covered in a barbecue sauce concoction (bbq sauce, ketchup, soy sauce, white vinegar, and brown sugar). When it was done, I shredded it and stuffed them in the crescents.

Buffalo Shrimp

I made these the other night and followed the recipe to a tee. They were okay, but not outstanding. I found the outer coating of flour and spices to be soggy, even after letting the shrimp sit on paper towels. The coating also fell off pretty easily. I don't know if it's worth the time and effort to make these again.

I really liked this, but I made some changes: I used rotini (spiral pasta), ground turkey, a can of corn, and about 1/4 cup of salsa. I also baked it covered with foil. Note: If you follow this recipe to a tee, it makes a LOT, so be prepared!
