Butter Chickpea Curry

While this recipe was very easy to make, I found the end result to be kind of bland. I think it could benefit from an additonal ingredient that's more flavorful than potatoes and chickpeas. Maybe peas?

Oven Baked Zucchini Fries

These were pretty good and fairly easy. I think calling them fries is a little misleading though. Mine were still mushy and barely crispy at all.

Holiday Chicken Salad

This was great for a light summery dinner. The serving size seemed off though. We used two chicken breasts and it made about 4 servings. I also added finely chopped carrots, which I thought was a nice addition.

Tzatziki Sauce I

This sauce was so easy to make and really delicious! I served it with baked falafel, but it would also make a great dip for vegetables, like cucumbers, carrots, and bell peppers. Thanks :)

Baked Falafel

I followed this recipe to a tee, minus the coriander since I didn't have any on hand. I wish I could give it 3.5 stars because I don't think it's quite deserving of 4. I was surprised that the mixture was so wet after adding the egg and flour. I pan-fried them for a little more than 3 minutes, but they were still quite difficult to work with. Thankfully, they didn't completely fall apart. I'd probably make these again, but I wasn't too crazy about them. While I'm a huge garlic-lover, I think the 3 cloves was a bit overpowering. I'd reduce it to 2 next time.

Baked Potato Soup

I thought this soup was okay. I altered the recipe a tiny bit by using 4 small red potatoes, turkey bacon, and adding about 1 cup of mashed potatoes to thicken it up. After everything was mixed and cooked, I threw it in the crockpot to keep warm. It was alright, but not amazing.

Feta and Sun-Dried Tomato Stuffed Chicken

I decided to make this last night and I'm glad I did. It was extremely easy, but looked very impressive! I took the advice of another reviewer and poured the extra marinade over the chicken before putting it in the oven. I also added a generous amount of chopped fresh basil to the tomato/cheese mixture. I'd definitely make this again.

Flaky Dill Biscuits

I thought these were pretty good. Instead of dill weed, I used dried parsley, garlic powder, and some old bay seasoning. I think that they could've used a bit more salt, but they were still nice and best of all--very easy!!!

Orzo with Parmesan and Basil

This recipe was amazing and very easy! Fresh basil is absolutely essential, so make sure you use it. I found that 1/2 cup of parmesan was too much though. I used about 1/3 cup and it was still very cheesy. It tasted like fancy macaroni and cheese! I would definitely make this again and again. Just make sure to keep an eye on it and stir it occassionally so the orzo doesn't stick to the bottom of the pan.

Buffalo Shrimp

I made these the other night and followed the recipe to a tee. They were okay, but not outstanding. I found the outer coating of flour and spices to be soggy, even after letting the shrimp sit on paper towels. The coating also fell off pretty easily. I don't know if it's worth the time and effort to make these again.

Maple Salmon

I'm not sure if I did something wrong, but this is how I went about it: I marinated the fish in a baking pan in the syrup/soy mixture. Then I put that pan in the oven. About 10 mins into the baking time, the marinade around the fish was bubbling and burning. The fish itself tasted okay (nothing great), but the pan was a mess. I don't think I'd make this again based on the cleanup alone.

I liked these, but I think the recipe was a bit flawed. There's no way you need an entire pound of meat, 1.5 cups of sauce, etc unless you're making 50 of these. I pretty much quartered the recipe and had more than enough for 2 people. I also added some veggies (peas, corn, carrots, string beans) and only had to bake for 12 minutes. I'd make these again. They made for a quick and tasty dinner.

I really liked this, but I made some changes: I used rotini (spiral pasta), ground turkey, a can of corn, and about 1/4 cup of salsa. I also baked it covered with foil. Note: If you follow this recipe to a tee, it makes a LOT, so be prepared!

Slow Cooker Beef Stroganoff I

I took some advice from other reviewers and tweaked this a bit: - I lightly floured the meat and then browned it first - I added some minced garlic - I used cream of mushroom soup (2 cans) since that's all I had - I used soy sauce instead of Worcestershire - I added 1/2 packet of onion soup mix - I cooked on low for 6 hours Great results! I served it with egg noodles nad it was amazing.

Baked Asparagus with Balsamic Butter Sauce

This was so easy and absolutely amazing! I think the tablespoon of soy sauce was a little overwhelming though, so I just added more melted butter. I also replaced half of the butter with a butter substitute for a healthier alternative. I'll be making this again and again. Thanks!

Peanut Butter Cup Cupcakes

These cupcakes were great! They were super moist and a nice alternative to regular cupcakes. I found that 22 minutes was the perfect amount of time. I also didn't have shortening, so I just used 6 tbsp of softened butter and they still tasted amazing.

Campbell's Kitchen Tuna Noodle Casserole

I really liked this recipe. I omitted the pimentos since I didn't have any and used 1 cup of frozen vegetables (peas, carrots, corn, and string beans) rather than just frozen peas. I also added half of a diced onion. Easy and delicious!

Delicious Raspberry Oatmeal Cookie Bars

This recipe was simple, quick, and very easy, so I highly recommend it if you're looking for something fast and delicious. However, I found that there wasn't enough of the oat mixture to cover the bottom AND the top. Next time, I'll double the recipe for the oat mixture. I also used a mix of half raspberry jam and half apricot. Yum!
