Cream Cheese Frosting II

I love cream cheese frosting and this one was very good. I'm giving it 4/5 stars though because I found that it called for a bit more powdered sugar. I used 2.5 cups instead of 2. I think even 3 would have been okay. I used it on a carrot cake and it was delicious.

Sam's Famous Carrot Cake

This recipe was labor intensive and required a lot of ingredients, but it was well worth it! I followed the recipe exactly (minus the pineapple because I forgot. Oops!) and it was great. I divided the batter into two 9" round pans, baked them for about 45 mins, and ended up making a layer cake with cream cheese frosting. Amazing recipe!

Southwest Chicken

This dish was extremely good! I cut the chicken into bite-sized pieces rather than using whole breasts. Per other reviewers' suggestions, I added a lot of seasoning (salt, pepper, cumin, chili powder, and oregano), which I think was crucial to the dish. I served it with Spanish rice. It was so easy and healthy that I would definitely make it again.

Peanut Butter Cup Cookies

Nice recipe! I followed it exactly except I used Hershey's kisses instead of peanut butter cups. I'm not sure what I did wrong though because I only got about 22 cookies out of this. They weren't huge either! I'd double the recipe if you want 40.

Chicken Paprikash II

I didn't have time to cook the chicken for an hour, so I just cut the cooking time down by a bit. It still came out great! I served it with pasta tossed with a bit of olive oil and dill.

BBQ Chicken Crescents

I made these tonight and they were very nice and filling. I cooked 2 chicken breasts in my crock pot for 6 hours on low, covered in a barbecue sauce concoction (bbq sauce, ketchup, soy sauce, white vinegar, and brown sugar). When it was done, I shredded it and stuffed them in the crescents.

Chewy Coconut Cookies

Yum! These were great and so easy to make. I also threw in a couple of handfuls of chocolate chips since I'm a huge chocolate fan. I baked them for about 12 minutes, but found them to be a bit too underdone, so I stuck them in for 1 more and it was just the perfect amount of time.

Banana Oat Muffins

These muffins were pretty good, but not as moist as I had hoped they'd be. I think the addition of the oats added to the dryness, so next time I'd either cut the amount of oats in half or omit them completely. I added some chocolate chips, which I thought were a great addition. Walnuts would be nice too!

Chicken and Gnocchi Soup

A nice recipe for a fall or winter night. I found it a little bland though, so I added some red pepper flakes for a kick. I would make this again, but i think next time I'd only add 1 cup of the half&half rather than 2.

Pumpkin Black Bean Soup

Wow! I figured this soup would be good, but not THIS good! I did things a bit differently, but it came out delicious. I used 2 cans of black beans, pureed, and only 2 cups of broth. What I got was a thick soup that's perfect for fall and wintertime. Thank you so much for this recipe!

Slow Cooker Chicken Taco Soup

This soup was pretty good and very easy to make. The beer gives it a nice flavor, so I wouldn't skip that ingredient! The recipe makes A LOT of soup, so I froze the leftovers to eat later.

Frank's® Red Hot® Buffalo Chicken Dip

This dip was pretty good. The only change I made was that I used chicken breast rather than canned chicken. I placed two chicken breasts in a crock pot and added enough broth to cover them. I cooked them on low for about 5 hours and they came out very nice. Much better than canned chicken, in my opinion!

Apple Crisp II

This recipe was easy and delicious, plus it was a huge hit at the party I brought it to. I used about 10 small granny smiths and altered the recipe a tiny bit. I doubled the "crisp" part and added a layer to the bottom underneath the fruit, then one on top. I also cubed the butter rather than melting it. Perfect for fall!

Spinach Stuffed Chicken Breast

I really liked the spinach mixture in this recipe, however, I feel that the whole dish lacked some flavor. I added a bit of lemon juice & some thyme, but I think next time, I'll use more spices. I would also suggest using the type of chicken breasts that are already thin. It saves a lot of time and work!

Slow-Cooker Pepper Steak

I made this last night and it was pretty good. I used stew meat since that's what my grocery store had, but I think next time I'll try it with the stir fry strips. I tweaked it a little by adding a couple tablespoons of brown sugar, which was nice. I served it over mashed potatoes.

Award Winning Peaches and Cream Pie

This was a great recipe. It was simple and came out great! I think it's more cake-like than pie-like though because the "crust" is very fluffy and spongey. I baked it for 34 minutes and I found that it was the perfect amount of time. Great for a light summer dessert!

Shrimp Fettucine

This recipe was really, really good, but I'm only giving it 4 stars because I tweaked it a little bit. Rather than using fettucine, I used linguine. I also cut down the butter by half and used 1/4 cup of butter and 1/4 cup of olive oil. This was VERY buttery, so I can't imagine using as much as the recipe called for. I also added some chopped up grape tomatoes and parsley flakes towards the end. Very good!

Balsamic Chicken

This was good and easy, but pretty messy, which is why I'm giving it 4/5 stars. I made the marinade exactly like the recipe suggests and it was really nice and mild. I was afraid the vinegar flavor would be overpowering. I think the Italian seasoning was key, so if you don't have any, make your own with what you've got! I served it with orzo.
