Eggplant Parmesan with Fresh Basil and Smoked Mozzarella

Great recipe! Unfortunately, my store didn't have smoked mozzarella, but I used fresh and it was still good. I took another person's advice and dipped the eggplant in flour before the egg/milk mixture. It helps the breadcrumbs stay on!

Ronaldo's Beef Carnitas

This recipe was great! I used a smaller roast (a little under 2lbs), but doubled the seasoning anyway and it came out delicious. Per another reviewer's suggestion, I wrapped the seasoned roast in foil, then cooked it in the crock pot on high for 5 hours. Then I removed the meat, transferred the juices back into the crock pot, put the meat back, and shredded it with two forks. I cooked it for an additional 30 mins on low. Perfect for tacos!

Oven Roasted Red Potatoes

I took the advice of another poster and baked at 350 for 30 minutes and then at 400 for 20 minutes. The potatoes were perfectly crisp! The onion mixure was a bit overpowering, but still pretty good. Make sure to grease your foil/pan though or else the potatoes will get stuck!

Awesome Slow Cooker Pot Roast

What a great recipe! The roast I used was just under 2.5 lbs and it came out very tender after cooking on high for 4 hours. I took the suggestion of another reviewer and used only 1 can of soup and 1/2 a can of water. I also quickly seared all sides of the meat before putting it in the crock pot. I would highly recommend this recipe! I served it with a side of roasted vegetables.

Roasted Garlic Lemon Broccoli

I make a similar recipe, but change some things up, which results in a 5 star dish--bake the broccoli at 425 for 20-25 minutes, add lots of freshly chopped garlic, and toss with a healthy amount of parmesan cheese after it's all done. I also add the lemon juice after the broccoli is cooked. Only roasting it for 15 minutes in a 400 degree oven would result in still-crunchy broccoli!

Pesto Chicken Florentine

This dish was really good. However, I found that the sauce took a long time to thicken up. Next time, I'll start cooking the sauce right in the beginning instead of waiting until my pasta was cooking.

Chewy Peanut Butter Chocolate Chip Cookies

Vegetarian Korma

This recipe was good, but I wasn't blown away. Per other commetner's suggestion, I used a can of coconut milk instead of the cream. I also simmered it for 20 minutes to ensure that the potatoes would fully cook. I served it with Basmati rice and would make it again.

Zesty Slow Cooker Chicken Barbecue

I followed the recipe exactly, except for the Worcestershire sauce since I didn't have any on hand. I cooked it on low for 5 hours, shred the chicken, and then cooked it for another hour. It was really moist and the flavor was great. However, it tasted pretty much the same to me as my normal crock pot BBQ chicken, which is made without the Italian dressing. Others said that using frozen chicken breasts resulted in a watery sauce, but mine came out fine.

Grilled Lemon Yogurt Chicken

This chicken was great! The only thing I changed was that I didn't pat the chicken dry after taking it out of the marinade and I'm glad I didn't! Grilling it with the marinade still on the meat resulted in a great flavor. I would highly recommend this!

Curried Coconut Chicken

This recipe is easy to make and lasts for days. I found that the liquid didn't thicken up as much as I'd like, but it was still good. Maybe next time I'll add potatoes to make it heartier. Be prepared for your house to smell like curry for awhile though!

Lemon Chicken Piccata

Great recipe. I nearly followed it to a tee. I found that the sauce wasn't thickening, so I added a slurry of 1 tbsp of corn starch+1 tbsp of cold water. This thickened the sauce up a bit too much though. I also found it to be a bit too sour. I added a couple tablespoons of chicken broth, which thinned out the sauce and also made the lemon less overpowering. Definitely taste test the sauce before serving! If it's too tart, add some broth or white wine, little by little. Overall, this was delicious though!

Corn and Black Bean Salad

A great, easy recipe that's perfect for the summertime. I followed the recipe closely, but subbed olive oil for vegetable oil and also added one diced red bell pepper. If you don't like balsamic, this isn't for you, but I happen to love it. I think cilantro is key and if you're not a fan of cilantro, I'd go with parsley.

Lemon Cupcake with Blackberry Buttercream

The buttercream was great (I used strawberry preserves), but the cake portion of the recipe seemed off. The cakes didn't rise at all and I was left with flat-topped, burnt cupcakes. I had to trim them quite a bit and thought they'd surely be a disaster. Thankfully, I was able to hide the mess with a lot of frosting. I'd use the frosting recipe again, but not the cake one.

Homemade Dog Food

I think this is a really nice base recipe, but that tweaking it a little is a good idea. I stuck with the brown rice and ground turkey, but left out the rosemary, as I don't think it's necessary. For vegetables, I added diced sweet potatoes, which I boiled and then mashed afterward for easier consumption. For calcium, I added a couple spponfuls of fat-free, plain Greek yogurt. My 10 year old Chihuahua-Jack Russell mix went wild over this. You can also substitute the ground turkey for boiled chicken breast, which can be shredded after cooking.

Sweet Grilled Corn

This was really good! I loved the blend of herbs. I never would have thought to add most of them to the melted butter, but it turned out great. Unfortunately, I didn't have time to soak the corn for a full 1-3 hours, but I don't think it really affected the taste at all. This is a great side dish at a summer barbecue!

Slow Cooker Cilantro Lime Chicken

What a great recipe! I made this in my crock pot the other week and it came out fantastic. I changed the recipe a tiny bit by slicing up one onion and one green bell pepper and adding it to the pot. Once everything was done, I shredded the chicken and put everything in whole wheat tortillas with some sour cream. They made great tacos!

Easy Valentine Sandwich Cookies

These cookies were a lot of work, but pretty good. They came out a bit crispier than I would've liked, so I'd probably keep them a little thicker next time. I took another reviewer's advice and lightly dusted the rolling pin, the dough, and my work surface with powdered sugar instead of flour, which was nice. I'd only make these again if I had a lot of time and didn't mind cleaning up afterward!

High Temperature Eye-of-Round Roast

This was really good. I had never made a roast before, so I was nervous, but it came out pretty well. I used a 2.62 lb roast and kept it in the oven for 18 minutes. It came out medium-rare, but I prefer medium, so I think next time I will do 9 or 10 mins per pound rather than 7 mins per pound. It was really easy though and I think it's a great recipe for a first-timer.
