Bacon Wrapped Pork Medallions
If I could give this 10 stars I would. I've made this recipe twice and I think it's one of my favorites on this site. I usually double it though, so we can have leftovers. It's even more amazing the day after. I wrapped the tenderloin with the bacon, sliced it, then sprinkled with the spices. I didn't cook the bacon before hand, just used it straight out of the package. I brown them on both sides (about 3 minutes), then put it on a baking sheet. I poured the bacon fat and butter remnants over the pork, then bake it for about 20 minutes. Yum!!!! I served this with the kicked up mac & cheese, also on this site. They were both a huge hit!

Kicked Up Mac and Cheese
This was delicious. I followed the recipe pretty much as it's written. I did use a whole box of pasta though. As some users mentioned, I think it could do without the breadcrumbs, because I really don't think it added much flavor wise. I did put some extra cheddar over the top. Delicious!

Shrimp Scampi Bake
This is probably one of the easiest and tastiest dishes I've ever made. I've never baked shrimp before. We've always grilled or cooked them on top of the stove. How simple to bake it! I didn't change much with the original recipe. I left the amount of butter, because I made the copy cat version of the Red Lobster Biscuits. I wanted the "extra" juice so we could dip the biscuits. lol! I also added some white wine to the mixture and it really enhanced the flavor. I made it a few hours in advanced, put the dish in the fridge and let it sit. Its turned out incredible! I served it with baked potatoes and steamed veggies. What a great dinner!
