Banana Banana Bread

This is the perfect all purpose banana bread recipe. I did add a cup of walnuts because I love nuts and a half teaspoon of cinnamon and I didn't quite have the 2 1/3 cups of banana called for so I grated half a fresh apple on a cheese grater to fill up the measurement. Don't know how accurate my oven is - I just moved - so after a half hour it was looking pretty brown and I lowered the temperature to 325 for the remainder. Took it out at about an hour and 10 minutes - the top was just slightly springy to the touch and a wooden skewer came out clean but moist. Yummy as is but a little lemon buttercream frosting makes it dessert!

Chef John's Orange Duck

Excellent and easy! I have tried to roast whole duck twice before only to end up with a smoky, greasy mess. I bought 2 boneless duck breasts (Mary's brand, natural, free range duck from Petaluma, California) and followed this recipe - perfection! Moist, tender and savory. The sauce was light and not too sweet. Roasted some winter squash and purple potatoes and a steamed half an artichoke on the side for a special dinner. Even though I was worried about the cook times being under done, I let them rest in a warm oven while I made the sauce and it was perfect. Only wish I had taken a picture!

Quick and Easy Hollandaise Sauce in the Microwave

Fish Fillets Italiano

I used 1 lb of rock cod filets (2 filets) a can of organic crushed tomatoes with basil, added a hefty bunch of roughly chopped arugula from my garden, didn't have white wine so used red, added a teaspoon of spanish sweet paprika, a few branches of fresh thyme, and the olives were pitted kalamatas. My fish hating fiance loved it! Served over rice with steamed artichokes on the side. Yum.

Batman's Best Caesar Dressing

This is delicious! I used just one Tablespoon of Anchovy paste but I think 2 would have been fine. Tip: I combined all ingredients in a blender except the olive oil - then with blender running added oil in a thin stream and the consistency was wonderful, almost a mayonaise. It helps to use the best of ingredients - fresh squeezed Meyer Lemon, fresh garlic, good olive oil. I like that this recipe doesn't use fresh egg yolk so that it will keep in a jar in the fridge without spoiling.
