The Best Bean and Ham Soup

Reduced the quantities to fit my pot. Made ham stock the day before like another reviewer mentioned to be able to skim off some fat. Did not add the vegetable juice or lemon juice, used Rotel tomatoes, half the chili powder, mustard, and Worcestershire. Used 3 cans of beans as another short cut. Added the veggies during the last hour of simmering as other reviewers recommended. Really liked the flavors and the mix of veggies with ham and beans. Cooked the soup about 2 1/2 hours.

i made more sauce (tripled due to the amount of coconut milk left) glad to have more, but there was really too much. really good mix of flavors, i didn't have lime zest and omitted the cashews.

My Hoppin' John

Didn't want the bulk of including the rice, so make the recipe as written except for adding the rice. This tasted great, maybe isn't traditional Hoppin' John that way, but way way way better than just serving the obilatory black eyed peas plain.

Pecan Pie V

Following others' suggestions, omitted the white sugar and used a few pecan halves on top for appearance. I didn't have a crust and wanted to save the calories anyway, so made this in a glass pie plate without crust. At 350 for 10 min and 325 for 30 min it came out perfect. Southern hubby who has grown up on pecan pie said to make it this way, without crust, from now on!

Brown Ale Braised Chicken

I liked the flavors. Needs more salt and at least double the chili powder. I would double the rub recipe since I made this with 4 skinless thighs and ran out of the rub. I made this in a dutch oven on the stove, then oven and used cornstarch instead of flour. Will use just the stove in the future to allow time for the sauce to reduce with the pan uncovered. Needs bread or rice or mashed potatoes to soak up the delicious sauce. Also, the veggies get tender while cooking in the sauce, so only need to be browned before adding the liquids. And the beer needs to be added to the hot pan after browning the veggies to deglaze and burn off the alcohol. Then add the chicken broth and garlic.

Chicken with Red Rice and Spice - The Well-Fed Heart

Had this for supper. Used leftover brown rice and chicken. Used celery in place of one of the peppers due to an excess of celery in the frig. Simmered all the veggies and spices in a can of chicken broth (saved the oil calories), then added the rice and chicken. Very nice comfort food with flavor. Missing the tomato sauce made it a bit blander, but still very good.

Warm Orange and Mushroom Salad

Loved the flavors, only used half the amount of mushrooms,oranges and greens, didn't use any olive oil. Added half an avocado. Had way more dressing than needed, but loved the wilted greens in this. Will try it again!

Orange-Glazed, Pork Tenderloin with Italian Seasoning

Whole family liked it. I followed someone's suggestion to add a dry rub before applying the glaze. This added balance to the fruitiness. Not sure if the brining worked totally because when I removed the meat, a lot of the sugar and salt were undissolved on the bottom of the pan.

Leek and Fennel Soup

Substituted chicken broth and milk for the liquids. Added a dash of hot pepper sauce when serving. Mashed the veggies as other recommended. Added a bit of garlic powder and Nature's Seasons with the salt and pepper. This was so good I ate three bowls full at one sitting.

Suggest adding more spices like salt and pepper spice mix to the turkey, powdered garlic and red pepper to the veggies. Worked better for me to cook up the turkey, then remove it and cook the veggies on their own, then put it all together.

Potato Leek Soup III

I love the flavors of leeks with potatoes. I've made this recipe a few times and really like it more as sloppy potatoes than soup. I use half the butter, make sure the leeks are really tender before adding other ingredients, double the potatoes, and a few other adjustments. For convenience, I used a can of Cream of Celery soup and some water instead of the broth and cream. I added some red pepper for a little heat because that appeals to my family. Most important, I used a dutch oven and put the heat on low once I added the potatoes (Yukon or Red, I left the skins on) and soup so that it wouldn't burn.
