I washed the spinach in cold saltwater. This removes the unique bitterness of spinach. But nothing beats pepper leaves so use 'em if you can get some.

I love this dish specially when the spices are bumped up several notches. I changed a few ingredients: 1/2lb liver, 1lb lung, 1lb heart, 1lb spleen, 4bay leaves, 3 large onions finely chopped, 1 16oz can of stewed tomatoes, dash of parika, cayenne, and 2 jalapeno peppers. I boil the meats in water with salt, pepper and spring onions. (the water left from boiling the meat makes a good base for Demi-Glaze).

Portuguese Bean Soup

This is the best comfort food!!! I substituted the linguica with a local spiced sausage (we don't have linguica available) and a little less water. I served it to my Protugese friends and they loved it!!!

I love the way Filipino Adobo meets Buffalo Wings!!! I got turkey wings and put them in the pressure cooker for 10mins then cooked them as directed. Superb!!!

Mongo Guisado (Mung Bean Soup)

Simple and easy. I simmer it with anchovies and add prawns (shelled and deveined) towards the end of cooking. I use the shell of the prawns by simmering it in vinegar and/or white wine, ginger, a bit of garlic and white onion to make a jus for steaming halibut or wahoo. These go so well together it makes my mouth water just writting about it.

Filipino Menudo (Pork and Liver Stew)

Easy to prepare for daily meals or make it special by including bits of pepperoni lyoner, chopped chorrizo de bilbao, a can of liver spread, 3/4cup grated edam cheese and 3 red peppers. Yummy!!!
