Grandad's Pancakes

Reviewed: Jun. 30, 2015
This is by far the simplest and tastiest pancake I've made! It's also very versatile. I cut back on the sugar because I load it with fruit compote and syrup (1/8 c instead of 1/4), but as it's written, it's a perfect sweetness if that's what you like. As other reviewers suggest, you can add vanilla. I sometimes add cinnamon. The mix is very wet when you first combine the ingredients but if you let it sit it will puff up/thicken (5 minutes). This is a very light pancake - not what you'd expect to be served when at a late night diner. If you load up the pan with oil (say 1/8 c), the edges get nice and crispy!

Touchdown Chili

Reviewed: Apr. 3, 2015
The flavors were off - 1/3 c chili powder and 1 can of beer were too strong. If I try this again, I'll start with 1/4 c chili powder and 1/2 can beer. To compensate this time, I added an additional can of tomato sauce, lime juice, more honey (which I used instead of sugar). I also added lightly cooked bacon. The flavors did come together better after I let the pot sit overnight in the fridge, though.

Curry Stand Chicken Tikka Masala Sauce

Reviewed: Nov. 29, 2014
We aren't Indian food eaters at home (I've only eaten Indian food once before) but my bff sent us a spice jar of curry that I felt obligated to use. This was our second dish and boy, it was superb! The only deviation I made from the recipe was using butter instead of ghee. A couple was almost too creamy. Next time I'll cut back on the whipping cream, reduce to 2/3 c. I served it over fried rice with 1 t curry added in and a drizzle of fresh lime juice. That added a zing to cut the creaminess. It could have used some fresh greens. A previous reviewer mentioned serving with cilantro - that's on my radar for next time! Maybe some red pepper as well. Thank you!

Brooke's Best Bombshell Brownies

Reviewed: Dec. 15, 2012
fantastically chewy! instead of chocolate chips, i used reeses minis because my significant other likes peanut butter everything. was delicious. my only criticism might be that it seemed to be too sweet, i will be adjusting as necessary in the future. and i am just getting over a cold so maybe my taste buds are playing a trick on me, but it seemed a tad salty.
