Chicken Lettuce Wraps

Too salty. Definitely use a low-sodium soy sauce. I also found the peanut sauce lacking. Although we did eat them all, I would change things up next time.

Chicken Wild Rice Soup I

Not a fan. I tried the crockpot version someone suggested and it was way too thick and mushy. That aside, it's only three stars because I really didn't care for the flavor. Just kind of weird. Maybe being from MN makes me picky about my wild rice soup? I see lots of others liked it. I made it as listed with no substitutions.

Good flavor and pretty easy to make, but a bit chewy if not cooked long enough. I think I prefer stovetop recipes, but this was still worth making.

I made this as a gift and the recipient liked it, but I was not as impressed. I think I wanted it sweeter and spicier and less salty and garlicy. It was edible, but not my favorite.

Blueberry Cornmeal Pancakes

Tried them as written first but too runny and lacking flavor. Also stick to all my skippers, even the nonstick one. Added more flour, some sugar and almond extract. They were much better then. It's a good base recipe for eggless pancakes but needs to be played with.

Cranberry Orange Loaf

Fabulous! Works with frozen cranberries as well. Made it twice now. So yummy! One large juicy orange should have all the zest and juice you need (or two smaller oranges).
