Spicy Peanut Chicken Stir-Fry

I doubled all the ingredients in the sauce except for the cayenne and the vinegar, but it was still much too hot for me. I served with ramen noodles. If I make again, I will increase garlic, only put a hint of the cayenne in and use chicken breast instead of thighs.

Fish Fillets Provencal

The 15 minutes of simmering the fish and the tomatoes together robs this dish of its freshness. My beautiful garden fresh tomatoes tasted amazing before I added the fish to it, but had lost all of their flavor by the time the fish was ready. I will make again but with the following modifications: Use 1 tbsp of oil to saute onions. Add more garlic. Use fresh tomatoes and simmer with spices (add salt and pepper) until tomatoes are soft and tender but not mushy. Fry fish separately. Add lemon pepper to flour dredge. Serve tomatoes over fish. I served with Quinoa, but rice or pasta would be nice as well.

Chicken Jalfrezi

Awesome! Mixed all spices, onion, garlic, and ginger together in oil, then added chicken and fried as directed. I also added some chickpeas as I didn't have quite enough chicken. I only had a bigger can of tomatoes and I didn't put it all in but it was more than the recipe amount. Served with Naan bread, chopped green onions, and some sour cream. YUM! I didn't use the ghee as I didn't have any - didn't miss it at all. I think I will substitute chickpeas for the chicken to make this a veggie meal in the future. FYI: flavorful but not too much heat.

Cranberry and Cilantro Quinoa Salad

Really enjoyed this recipe, and I will definitely make again. I didn't have curry, so I used a generous amount of cumin. Based on personal preference, I will likely cut back a bit on the cranberries and add more of the almonds.

Fabulous Roasted Cauliflower Soup

Overall a good starter recipe, but definitely not outstanding. The only substitution I made was I used 2% milk instead of cream. Next time I will likely use 8 or 9 cloves of garlic and I'll just peel and throw in the roasting pan. To make the soup more visually appealing, I served in a brightly colored ramkin and I garnished with asiago cheese (really nice flavour addition!), topped with a small slice of swiss cheese topped with green onion and croutons and I roasted it under the broiler until the top was browned and bubbly. Looked elegant and very appetizing.

Gingerbread Cookies

An ok recipe. I more than doubled the spice amount and still found it a bit bland - I'll likely quadruple next time. It's not overly sweet which I like. I found that I had to add a little extra water to get the right consistency (next time I'll try a bit more shortening). For those that complained of stickiness, I had to flour my rolling pin and table well to prevent sticking, but then didn't find it too problematic.
