This is an amazing cheesecake recipe. I used a 9 inch springform pan and I needed more graham crackers than the recipe calls for. It's soo important that the ingredients are at ROOM TEMPERATURE so that you end up with a smooth and creamy cheesecake and not a lumpy one. I used an oven bag to keep the water from getting into the pan as I cooked in a bain de marie. LEAVE IT IN THE OVEN! I cannot stress this enough. After one hour just turn the oven off and leave it in there for a few hours. I made an amazing ganache that I poured on top when the cheesecake was cold.
Nutella Ganache: 1 cup of heavy cream, 1 cup of nutella, 1/3 cup of semisweet chocolate chips, 1 tablespoon of dark rum. Heat in a saucepan and then cool.
