Cumin Rubbed Chicken with Avocado Salsa

Cards on the table: I have to confess that I added a teaspoon of chili powder and a teaspoon of garlic powder to the rub. Also used chicken tenderloins because that is what I had on hand. This was a wonderful, wonderful dinner! My roommate doesn't care for cilantro or onion (I know, crazy, right?) so minus those two things, I mixed everything else together, gave her half and I added the two missing ingredients to mine. Served with some refried beans and you have a delightful meal.I will be making this again, probably many times in the near and distant future. I think that this is my favorite recipe I've ever used from

Fast English Muffin Pizzas

Ive been making these for years and still love them. Like just about everyone else said, toast the english muffin first. Also, I've always used the broiler rather than baking them in the oven so they cook much faster but can easily burn. I suppose I'll try my toaster oven next time. I have loved these little pizzas for years!

Asparagus and Mozzarella Stuffed Chicken Breasts

I have a similar recipe to this and dryness is not an issue. It's pretty much the same except that I make a sauce of 1/2 cup mayonnaise, 3 tablespoons dijon mustard, about a tablespoon lemon juice, 2 teaspoons dried tarragon and a teaspoon of black pepper. The recipe I have says to spread the sauce over the outside of the rolled up chicken before rolling in bread crumbs (I use panko) but I spread the sauce on both sides of the chicken - so that it's inside and outside of the roll up. It very yummy and could easily be snazzy enough to serve to company.

D's Famous Salsa

This is very similar to the salsa I make at home. I love cilantro so I make two batches, one with tons of it for me and one with none for my roommate. I do blend it because I like it the consistency of applesauce. I also add jalapeno or serrano peppers. We use it almost every day - on eggs, sandwiches, salads, chips, quesadillas. Love this stuff.

No Fuss Shredded Beef Tacos

Made this exactly as the recipe says and it was quite flavorful but the volume of liquid was too much so it was kind of soupy and had to be strained to get to the tasty morsels. I'll definitely make this again but will cut back on either the liquid from the tomatoes or the beef broth just a tad. Yummmm!

Super-Delicious Zuppa Toscana

This soup is the best ever! I'm not generally a soup eater but I nearly always have a batch of this in the fridge. Just a few minor tweaks for me - many of which were in the recipe when I received it from a friend: I use the sage ground sausage because it's my favorite. Rather than cook bacon, I use real bacon bits from the salad dressing section of my grocery store - cheap and easy! I omit the onion because my roommate hates onion - don't miss it. Rather than using chicken broth, I cook the potatoes in 12 cups of water and add four tbsp of chicken bouillon granules. I use kale rather than spinach and, because I eat this soup so often, I no longer use the cream but have used half and half or even milk. I also use one tablespoon of the pepper flakes because I like it spicy. I like another reviewer's suggestion of using cauliflower in place of the potatoes. I'll try that next time I make it. I love, love, love this soup. EDIT: Tried it with the cauliflower. Pretty darn good, I must say. This soup is so, so wonderful!
