Best Bread Machine Bread

This was the whitest white bread I have ever made. LOL It was great except next time I would turn my machine on during those first ten minutes with just the yeast. The first several minutes on my machine it just sits there preheating and what not so I think the extra delay made my bread not as perfectly shaped as it could have been. Put the water yeast and sugar in, turn it on and put a timer on for ten minutes so when it's up just quickly add the other stuff. Someone here said it was bland and it is, but that makes it perfect for putting flavored anything on it, just butter or jam or making it garlic bread... You could do anything with this, it is a perfect basic bread. The crust was flaky-good and the whole family loved it.

Pot Roast in Foil

Ok so I didn't follow the recipe exactly... I decided my husband after many weeks of eating recipes made for toddlers (who only like things smothered in cheese or on bread if you get my drift...LOL)deserved something a little more adult. Frankly I was in the mood to do something else too. This recipe looked simple and perfect. I didn't have the right meat so I pulled out three boneless eye round steak to thaw. Then when I was putting it together I found my husband had used the last can of cream of anything soup in yesterdays casserole and had not told me so I used regular condensed tomato soup. I figured with the change in taste it probably could use a bit of spicing so I added probably 2 t. worcestershire sauce and a small can of chopped mushrooms (drained) over the top. The onion soup mix and foil I actually had! Go figure. Anyway I ran short on time so I put the heat at 375F and cut the time to 2 hours although 1.5 hours probably would have been enough. It tasted great! It was firm to cut but actually very soft in your mouth. Next time I would add more W. sauce and cut the cooking time. I would also suggest trying this in a crock pot/slow cooker to keep some of the juice, mine leaked out everywhere. My husband's comment was that it tasted very "professional".

Balsamic Glazed Carrots

Thie turned out pretty good, my husband and I really liked it. My children however had a different opinion. I added afew pieces of chopped celery for a bit of color and texture to it and I think it went really nicely. Good to try at least once!

Zucchini Oven Frittata

My kids weren't a fan of this but they're all under the age of five so I'm not really expecting them to. However, my husband and I thought this was fantastic! I followed it to the letter except I used eight eggs, ommited the onions (I am allergic), and used a small can of sliced mushrooms instead of fresh (fresh ones go bad so quickly becuase of the heat and humidity and it's JANUARY!). I also used three types of cheese for the topping: mozzerella, monterey jack, and mild chedder. It was a hit! As soon as my kids learn to like it it'll be a five star recipe in my book.

Mexican Rice Pilaf

This recipe is awesome! I used one can of stewed tomatos mexican recipe instead of the spices cumin, chili powder, and the jalepeno. It has those things already and cut down on the time I had to spend (and the chances of rubbing jalepeno juice in my eyes!). Great for kids because of mild taste but if you want more heat you can use the can AND the original items called for. ENJOY!

Jacky's Fruit and Yogurt Muffins

This recipe is awesome! I made these in a mini-muffin pan and found that I could turn the oven down 250F and cook for 16 min and they'd be done. It makes two pans. Don't fill the cup too full or it will have a flat top instead of puffing up nucely.

Banana Muffins II

Wow, this is definently going to be a favorite in my family. The kids love to eat them AND they are easy enough for them to participate in making them. I followed the suggestion with the vanilla and cinnamon, though I didn't really taste much of them. Could also add nuts, raisins, or chocolate chips. Great recipe!

Chicken Enchiladas I

These didn't turn out well for me. They were soggy and didn't taste at all like enchiladas. I think it would have been better if the chicken were shredded instead of cubed, otherwise you end up with some bites with no meat and they don't roll well. You can shred chicken easily by boiling it instead of pan frying it and puling it apart with a fork. It's much quicker too, especially if you use frozen chicken.

Banana Crumb Muffins

These taste great. Be careful not to overmix the topping, every time I did it my children "helped" and it was syrupy. Put it on anyway, made the top sink in. Still tasted great though. These went fast at neighborhood potluck!

Pizza Dough I

This turned out perfect! My husband can even do this one by himself. We found we liked it a little more if we let it rise for about half an hour before baking (already rolled out onto the pizza stone). Not so great for breadsticks in my opinion but the rest of my family found them fabulous. Definently give this one a try for homemade pizza.

Cheesy Potato Casserole

I halved this recipe. It turned out really good, but my kids wouldn't eat it (all they wanted were cookies, go figure). I like it and I will make it for myself again. A really nice comfort food.

5 Minute - Candy Bar Pie

Italian Bread Bowls

I tried the tip of having the dough rise the second time in bowls but it still kinda flattened out. Just a little though, they were still round enough to use, just not a HUGE bowl. Great for kids. I'm proud of my first try with yeast bread, and will definently be making these again. They were golden the first time I pulled them out for the egg wash so the second time I only had them bake for about five to ten minutes. That was more than enough...

Vegetable Cheese Soup I

This soup was wonderful!!! I didn't have the processed cheese so I just used cubed sharp cheddar and colby jack. Did add a little more potatoes and some broccolli. Didn't have vegie broth so I used four chicken boullion cubes with package directions for broth. Had on hi for four hours bacause I started kind late. People who don't like soup liked this! Goes perfect with the "Italian Soup Bowls" also on this site. Enjoy!

Eggless, Milkless, Butterless Cake IV

I did a few things differently with this one. I took out the raisins and instead put a can of sliced peaces (in natural juices, drained) on the bottom of the pan. I also added a dash of allspice. Did this in the microwave for 12 minutes on high. It turned out great! It was the perfect breakfast treat when I was out of eggs and out of ideas. It was a little dry but I'm wondering if that's because I took out the raisins and it wasn't anything that hot chocolate or coffee/tea couldn't fix. I will definently be making this one again! My 1 year old and 2 year old both loved this and it is cut back on fat for me.

Creamy Potato Casserole

I used Cream of Mushroom soup to give it a little more taste. It wasn't nearly as creamy as I thought it would be but my children (18 mths and 2 1/2 years) pigged out on it. This made a very large portion so there were a lot of leftovers but my children gobbled it down then too! I didn't like it much but it will definently be made over and over again for the kiddos!

Easy Baklava

This is my husband's favorite desert and he said it was better than the gourmet stuff we usually buy. I thought I could have used a little less of the syrup and more phyllo (it was VERY nutty) but it's still very good. Great to eat alone or on vanilla ice cream! I used pecans as the nuts and they definently added to the overall flavor.

Slow Cooker Lasagna

I cheated and cooked it for three hours on high and one hour on low heat. It turned out fantastic! My 2 year old gobbled this up! I will definently be making this again and again. Thanks so much for this recipe!! Be careful, it will boil out the top if your crock isn't big enough.
