Sylvia's Birthday Cake

I made this last night for breakfast. My teenage daughter actually loaded this into our bread machine! Liquids first, ran on cake setting. I did add a 1/4 cup of craisins just to make it more breakfast-y. I also used agave instead of sugar (in pregnant on a special diet that's not fun) same measurement. It came out great! Slices well, not crumbly, but fluffy and moist. Would be good with just a little butter, powdered sugar, frosted, honey, cinnamon... Very light flavor. Perfect. Thanks!

Zucchini Cake I

I made this cake with left over spaghetti squash- no difference in taste but I did cook it first to make it shredable in the microwave for 15 minutes. 1/4 of a large squash was enough. Cut sugar to 2c. Oil was 1c and 1/2c applesauce. I also added raisins, no idea how much maybe a cup or so. Baked in IKEA silicone round cake set (1 is small maybe 5" and other is made closer to 9") and a glass rectangle pan (don't know dimensions but smaller than 9x13). Baking time was off for all three, by about 15 minutes (more). Tasted great! I skipped frosting and just powdered sugar sprinkled over the top. Very moist, rose well, held its shape, raisins added very nice flavor. Next time I might add extra cinnamon, allspice, or cloves. Will try cranberries. Yum!

Quick and Almost-Professional Buttercream Icing

I don't make frosting, it always tastes nasty and chemically on detour bought cakes so I thought I didn't like it. Surprise!! This is actually good and easy! Thanks! My banana cake thanks you. :D

Peach and Cranberry Muffins

OK so I followed the directions as best I could, I didn't have everything on hand. I used wheat floor for white. I didn't have applesauce so I used 1c. vegetable shortening. I know I know less healthy but it was that or nothing so.. I also used canned peaches and dried craisins being as it's winter and good luck finding those fresh! It was a little dry probably because of the wheat flour. It looked like bread dough instead of muffin batter so I added the juice from the peaches in 1/4c increments until it was better. Filled silicone cups 3/4 full. Baked at 375* for 35 min (again probably because it was denser with wheat flour) and voila! These were very pretty, moist, delicious family treats! Thanks!!

Fruited Curry Chicken Salad

I used this as a base but didn't have all on hand which is why the four stars. So added pears, sunflower seeds, poppy seeds, lemon juice, celery, raisins, turmeric, and mayo. Did NOT have apples, onions, grapes, pecans, or golden raisins. So umm... it's all interchangeable right?? Served this on popovers with spinach leaves. Was DELISH and would do it again. I have a similar recipe that uses apple cider vinegar and dried cranberries so just a thought of how creative with this recipe you can get! EnjoY!

Colorful Corn Chowder

Kids thought this was really good and hubby happily took it to work for lunch. I added celery to the veggies. I also used two cans of corn. Added extra water to make a little more. Next time I might sprinkle some crumbled sausage on top with the cheese! On a side note all I had was potato pearls and I went ahead with it anyway. There IS a difference and although I made it work I wasn't able to follow liquid recommendations as closely. I knew that would be the case. Wish I had flakes around my house but I don't! Oh well. :)

Cabbage and Dumplings

I added carrots and red bell peppers to veggies. Also some crumbled Jimmie Dean sausage. Kids gobbled all of it! I liked it the way it was but some felt the need to add teriyaki sauce.

Potato Crust Pizza

This was pretty good. I shredded the potatoes and rinsed them in a colander- pressed out extra starch and liquids. Added pizza spice to the dough. I also used krusteaz pancake mix for a slightly thicker crust. Everyone really enjoyed this. I would try with just flour for a thinner crust to see if it is crisper (my hubs is a thin & crispy pizza fan). Overall a great recipe that is fairly quick and easy. Didn't use this recipe's toppings though, did tomato sauce mozz sausage and olives. Everyone gobbled it up!

Tea Biscuits

This recipe is quick easy and delicious! the biscuits are flaky.I doubled the recipe and used canned milk- 1 can is 1 1/2 c which is perfect for doubling. I also replaced 1 cup of flour with wheat flour. Made this with BobJones gravy recipe also from this site. They have disappeared! My children inhaled these. Also good with honey which was resorted to when gravy was gone. I will make this recipe again and again and again.. :)

Marshmallow Treats

Came out pretty good! I followed advise of other posters and added a little milk vanilla and peanut butter+ peanut butter m&ms! My hub had a hard day and these were a nice, quick, easy treat (kids had a lot of fun helping with) to lift his spirits. Never been successful at making these before! Thanks!! :)

Super Sausage Gravy

This gravy is nice and thick. My husband loves his this way. I end up adding some extra milk to make it go a little bit farther - we have eight eaters! I used canned milk this time - 2 cans is 3 cups. I have even used whole wheat flour when out of all purpose and it came out great! No one could tell!! I made these with Tea biscuits also from this site. Easy, quick, and GONE! :)

Bill's Sausage Gravy

This was ok but I think that the Super Sausage Gravy recipe on this site is better. You won't have to add extra fat (butter) if you leave the meat in like that recipe suggests. Extra steps for almost no difference, the outcomes are pretty similar. I use the extra milk this recipe calls for (3c instead of 2c). Other than that the recipes are almost the same. I don't use Bob Evans sausage unless I happen to have it on hand (the other recipe calls for it). I have used Jimmy Dean and a few other brands, I can't tell the difference. Call me uncultured swine I guess! LoL

Fluffy Pancakes

My daughter made these. The recipe was interesting and we had high expectations. Maybe that's why we felt these didn't rate as well. They were fluffy. They did taste good. But they weren't spectacular for the amount of work. My daughter complained they stuck to the pan - even with lots of butter. They seemed to burn before the inside was completely cooked and although that may be something with the temp of our stove (which is not reliable AT ALL).

Cinnamon Belgian Waffles

These were great for a quick bread being as most other Belgian waffle recipes call for yeast and rising (which in my world means I am being eaten by hungry children who can't wait). We had a problem with it seeming a little strong on the baking powder taste, honestly I didn't have a problem but others claimed to taste it... The batter was VERY runny but we tried it anyway. WOW! Totally unexpected fluffy beautiful waffles. I use a WaringPro restaurant style double waffle iron~ I have used several others and never had as much success as I do with this so if it doesn't work out, it might be your machine. We served ours with home made "honey syrup" also from this site and sprinkle of powder sugar. May play with it a little to adjust the soda taste which again, I didn't taste at all. LoL
