'Chinese Buffet' Green Beans

Added about 6 sliced garlic cloves to canola oil with a splash of seasame oil. Added the green beans. They were done after about 2 minutes. Then added the sauces, for another 2 minutes. The garlic cloves got burnt but everyone loved them.

Roasted Red Pepper and Tomato Soup

I would not add as much pepper/cayenne. I didn't even add the Tabasco and it was still a bit too spicy. I added the instant potatoes at end to thicken. We really liked it.

Caesar Salad Supreme

Everyone loved it - added maybe a tablespoon of milk to loosen it up a bit. The croutons are weird and unnecessary. Next time, I would use the Garlic Crouton recipe on this site.

Creamy Potato Casserole

I used O'Brien style hash browns and I think because they are in cubes (not shredded), the cooking time should have been longer. They were a bit raw tasting. Other than that, pretty good.

Sirloin Steak with Garlic Butter

We had a 2 lb top sirloin steak (salt and peppered it) that I grilled on the cast iron grill on the stove top. Ten minutes each side, then let sit for 15 minutes (prior to cooking, left meat out for 45 minutes to bring to room temperature). Cut the meat and then pour the butter sauce over. Served with horseradish sauce and a Roquefort/butter chilled mixture. People said the meat was good but needed the side sauces to add more flavor

Red Broccoli Salad

Easy to half the recipe for a family dinner. I used apple cider vinegar. I made the salad ahead of time (about 4 hours prior to dinner) but did not add bacon, almonds nor grapes til serving time. I toasted the almonds on the stove top by putting them in a pan over med high heat and stirring them frequently til browned up a bit

Nikki's Steak Saltimbocca

This was perfect. hubby gave it a 5. He can't imagine anything better. I used skirt steak, sprinkled it with onion powder and pepper after I pounded it(put in refrig for several hours). I put one slice of proscuitto first, then one sage leaf and one piece of cheese, about one inch by 3, crumbled. Rolled up, used one toothpick. Browned on all sides and then put in oven for 10 minutes. Let rest 10 minutes. Did not slice. cooked a bunch of sage in pan (used cast iron skillet) and pour everything on top of resting rolls

Roasted Rack of Lamb

Made this for Easter dinner and it was fantastic - followed recipe exactly. I seared it in my cast iron skillet and put that in the oven. It did take longer to cook in oven - maybe 20 minutes and it was pretty rare.

Baked Ziti I

Very good - ironically this recipe was on the back of the Safeway box of Ziti I bought....The only difference was that Safeway version said to cover for 20 minutes, then uncover for last ten minutes. Also, I used creme fraiche instead of sour cream and it was excellent.

Simple Whole Roasted Chicken

Doubled the seasoning as others recommended. Rubbed some under the skin. Marinated it about six hours. I am surprised that no one mentioned the high temperature in the oven tends to burn the skin and I had to put a foil tent on top of the chicken to prevent the skin from being burnt. This was one of the best chickens we have ever had. We also enjoyed it with the Chimichurri Sauce.

Lentil and Sausage Soup

Loved the recipe, even my picky teens. I simmered for about 45 minutes. I used pre-cooked lentils from Trader Joes and added those with the pasta during last 20 minutes. I also chopped the carrots, added some zucchini and spinach. I used a lot less water since we like thicker soup. Excellent.

Corn Chowder I

We all loved this recipe. I didn't have creamed corn so I used my immersion blender for part of the soup prior to adding a can of corn. I pretty much got all the chunks of potatoes blended into the soup. I also had shredded cheddar cheese and bacon bits for adding on top.

Cajun Style Stuffed Peppers

We loved this recipe. I only had smoked paprika and that worked fine for the Creole Seasoning recipe (that you can find on the Allrecipes site). This recipe makes A LOT and I used 12 bell peppers and I still had stuffing remaining. I put a bit of montery jack pepper cheese on top of each bell pepper It was fantastic - maybe a little less rice and a bit more shrimp and sausage

Jackie's Special Meatloaf

Very good and very easy. I had leftover Panko crumbs to use and this was a perfect choice. I did use some chopped onion and minced garlic instead of the powders. Also, I added some chopped red bell pepper, celery and shredded carrots. I added worcestershire as someone else suggested. I guess I am saying this is a good base recipe and add what you like.

Roast Sticky Chicken-Rotisserie Style

I didn't have any onions and I cooked it 3 hours at 300 degrees--and husband said it was the best chicken he ever had! This recipe is extremely easy to make. Next time I will use onions. I don't think it really matters what temp/time you use for your preference in cooking as this chicken always ends up tasting great. Next time I probably will do my normal chicken roasting temp/time of 375 degree for 1 1/2 hour.
