Citrus Turkey Brine

I have tried a plain brine once before but this was much better. I used a fresh turkey for the first time and, because my turkey was 22 pounds, I did not have a pot big enough. I used a large kitchen trash bag to hold the brine against the turkey better, and then put the bag with the turkey's tail up in the pot. It was a good thing I did because it did get a pin hole leak so I will use a heavy duty bag next year. For extra flavor I also rubbed oil and a mixture of herbs (sage, thyme, paprika, salt and pepper) all over the bird, including the cavity and under the skin and I put all the items from the brine back in the cavity. I barbequed the turkey for about 4 hours till the multiple poppers popped up. (I always use at least three). Everyone said it was the best, most tender, juiciest turkey they've had.

Chinky's Mango Bread

The bread was moist and tasted good but I wished it had more of the delicious flavor of the mango. It could have been peach bread. I love mangoes and since they are fairly expensive I think I would rather save them for something else. I had a similar reaction to strawberry bread, the cooked version can't compete with the fresh.

Orange Herb Roasted Chicken

I roasted a 6 lb bird and found it juicy and delicious. It did take a bit longer,and I had to continually baste and add extra broth to the pan. I also followed the advice of others and blended in dried Italian seasoning - mostly dried versions of the fresh herbs in the recipe, and orange zest to the butter before putting it under the skin. I also added fresh-squeezed orange juice to the deglazed pan juices just before serving with the chicken.

Awesome Baked Sea Scallops

This was a disappointing dish. I followed the recipe as is. The shallots were too strong and competed with the delicate scallop flavor and the bread crumbs (I used "homemade" from farmer's market) were fairly tasteless and gritty, a lot like sand. Should I try it again, I would saute the garlic and shallots first and season the bread crumbs and use butter instead of olive.
