Black Bean Tortilla Casserole

Surprisingly delicious! As I was making this I had my doubts, but it's really very good. Don't know what kind of "chopped green pepper" the recipe is referring to, but I used red bell pepper (because I didn't have green). The bell pepper adds a lot to the texture and flavor. I added sliced olives to the top before cooking, and used 12 tortillas (6 per layer) instead of 8. My husband loved this. Will definitely make it again.

Awesome Slow Cooker Pot Roast

This truly WAS awesome! The only modification I made was to sprinkle seasoned salt on the roast before cooking. Didn't brown the meat first. It was fork tender, and the gravy was fabulous.

Spiced Butternut Squash Soup

Disappointing. My husband liked it a lot, but I thought with the sherry and potatoes, you lost the flavor of the butternut squash (which I happen to like). And I agree with those who said it was too thin. I won't make this one again.

Old-Fashioned Swiss Steak

This was fabulous! Easy to make and delicious. The steak was fork-tender, and the sauce had a welcome zip to it. The only change I made was to add a full can of diced tomatoes because I used two ribeye steaks that were bigger than the 3/4 pound total in the recipe.

Cheesy Creamed Spinach

My family loved this! I used Swiss cheese instead of provolone, because I like the mixture of spinach and Swiss cheese. I used about half the amount of liquid and used half-and-half instead of heavy cream. I think you have to gauge the amount of cream by how much spinach there is after it all wilts. Wonderful flavor!
