Baked Green Tomatoes
Bland, and for me, using corn mean overpowers the tomato, does not complement it at all. I will try again, using other reviewers suggestions of mixing in Italian bread crumbs and maybe some ranch dressing powder (don't add salt if you use ranch dressing powder though, as it is very salty already). Nutritional yeast would also add a nice flavor component to the mix. I would also recommend dredging the slices in egg to make the coating stick and to add some crunch. And probably would work better to bake at higher temp for shorter time period.

Fruity Curry Chicken Salad
Excellent recipe, and a good base upon which to branch out. I resisted the temptation to add more curry. 1/2 tsp seemed scant, but it is perfect. More than that and it can start to dominate. With the curry spice a little more elusive, it really makes this recipe. I've tried it with apricots, granny smith apples, walnuts, and more. I think the pecans work better than walnuts. I also tried it with reduced fat mayo and yeah, it works that way, but it is not the same. Whatever you do, be sure you let it sit overnight in the fridge before serving. It completely changes the taste profile.

Exotic Mushroom and Walnut Pate
I made this exactly as written and I found it to be way too rich. I thought that was a lot of butter, but I stuck with the recipe, and whooeee it's a lot of butter! After tasting the finished product, I was able to salvage it, and ended up with something I would actually give 4+ stars to. I cut in about a cup of sour cream. Yes, you read that correctly, I added sour cream to REDUCE the richness, that's how rich this recipe was. Then I added a bit of garlic powder and salt to punch it up a bit and it ended up being quite good.
