Taco Seasoning I

this was ok but nothing special. Made it exactly as written. Sad cause I thought with this rating I had found the taco mix. I am deleting from my recipe box. :(

Roasted Vegetables

These vegies rocked! I make this all the time now changing the veggie combo every time. You must use fresh herbs. If you don't have fresh herbs, make something else. Don't cut your veggies to big or they won't cook and also don't cut too small as they will shrivel up. This is something that turned out better each time.

Awesome and Easy Creamy Corn Casserole

This was so easy to make and taste fantastic. As my husband said as he came back for thirds "this is addicting". I will be making this again. Next time I will add a can of diced green chiles to add a little pop. This recipe has so many possibilities. But this recipe as written is worth the 5 stars.

Steaks With Roquefort Sauce

sauce was very good. only change I made I only had 2 1/2 oz. of roqu. cheese so I added 1/2 oz of Monterey jack. I read all the reviews and for those of you whose sauce does not thicken, you probably are not cooking it long enough. You have to get it hot and whisk, whisk, whisk. It is ok for it to boil as long as you are whisking.

Sugar Coated Pecans

I have made this recipe many times now as it is a favorite of my husband. I have tried it with more cinnamon, adding almond flavor and I think the best is the way it is written now. I do not go to all the trouble of two bags. I start with large bowl and whisk my egg white then add pecans then sugar mixture. One bowl does it all so don't waste the plastic baggies.

Cranberry Orange Cookies

I read many, many reviews before baking these cookies. I followed the recipe exactly and the cookies are a true culinary delight. I did make sure my teaspoon of zest was packed in good and tight. I think they need the 375 degree oven to soften up the cranberries. I used fresh cranberries which if in season I highly recommend. The next time I make these I may add almond but I won't rate the cookie with the almond because it is not the same cookie!!! That's for all you chef's out there that make your own recipe then rate the one you didn't make! Also, my cookies did not come out flat but nicely unison and beautiful. I used a small melon ball scoop and made sure to pack and scrape on side of bowl to make flat on one end.

Classic Peanut Butter Cookies

These cookies were really good. Took them to where I volunteer and the girls raved about them and they all disappeared. They looked fantastic and depending on your preference you could have crunchy or soft. I baked soft ones for 11 minutes and crispy 13 min. The only change I will make next time is add a little more peanut butter. I don't know if because I used natural peanut butter (without hydrogenated oils) if this made it taste less peanut like) I like more peanut butter taste. I would not add vanilla to this recipe as it would distract from the flavor you are trying to acquire. I also used a melon baller to make sure all cookies about same size. Then I rolled them in some sugar and when on cookie sheet I flatten slightly with fork in crisscross manner. Wish I had taken a picture but they were gone before I got a chance.

Acorn Squash

This is a great way to do squash. I have been doing this for years but with a twist. We have squash when I make pork chops. This meal is so easy. Cut squash in half and seed. fill with the brown sugar and butter or use honey if you like. Then take your pork chop and salt n pepper to taste and lay on foil (big enough piece to wrap pork chop and squash. Next put squash on top of pork chop and wrap in you foil. Put in oven and bake for 45 min. to hour depending on chop and size of squash. (350 oven) The chop comes out so moist and the squash is wonderful. Plus this is easy to clean up. I use thick cut Iowa pork chops for this.

The Best Potato Salad

don't know what the fuss is about. When I tasted the dressing before mixing in with potatoes I thought it tasted like tartar sauce. Added more mayo which helped. Can't taste the ranch dressing. Will go back to my own potato salad. Relish taste is very strong so if your not a relish fan I would cut back the amount. Glad no company coming and hubby will have to eat it.

Mom's Best Macaroni Salad

this is exactly what I was looking for. I left out the peppers and added 1 cup cubed longhorn cheddar. Reduced sugar perhaps a few tablespoons. Very good recipe. As stated before it is the dressing that makes this so good.

Sam's Famous Carrot Cake

I hate to say it, but this recipe is so much better then my cc that I have been making for 45 years. I have made twice now once exactly as written the second time I used golden raisins that I plump up it warm water. The second time I didn't have buttermilk and the buttermilk is a must. could tell the difference. Golden raisins were much tastier. I also used a 9x13 pan and cooked for 40-45 mins. used a cream cheese icing and had a cake that was addicting. My husband ate almost the whole cake in two days ( I helped a little, lol) Give this a try you will enjoy immensely

Artichoke Chicken

very good. this is the recipe I have used for 20 years only as a dip with fritos. I used Duke's mayo and squeezed the extra marinade out of artichokes and used extra chokes as well. 5 mins before I added parm. cheese on top. My hubby doesn't care too much for artichokes but ate an extra piece of chicken tonight (no leftovers for dinner tomorrow now!) and said I didn't think the artichokes would taste this good. Will make again but next time I will play around with recipe. Maybe add some bacon and bread crumbs on top.

Southwest Chicken

made exactly to recipe and my hubby and I both thought the sauce was ok but chicken bland and dry from pan frying. If I make it again I would add red pepper, onion, and use a medium rotel or perhaps salsa and use my crock pot so chicken would be moist.

Bread Pudding with Praline Sauce

OMG this is killer. I had never made bread pudding before but this was easy. I used golden raisins (soaked in hot water to plump) and added 1/4 cup more to recipe. I also took a little butter in my frying pan and sautéed the pecans prior to making the sauce. My husband loved this and I took half to the hospital where I volunteer and everyone said it was the best bread pudding they ever had. Will make again only next time I will add a few more pecans to sauce and cut sugar to 2 1/2 cups, and add a little more cinnamon and vanilla. Either way this is a perfect dish to impress people. Thanks for the recipe.

Burrito Pie

Made this last night and my husband ate three helpings!!! I did not have a 4qt pan so I made the full recipe and used a 3qt and had leftover sauce/tortilla. My hubby used that for lunch today with tortilla chips. Will definitely make again.
