Yummy, yummy muffins. I've made these several times over several years. I've scaled the recipe to make one batch, stored it in the fridge to make bit by bit, made it in large, regular and small muffin pans, added jam to the middle, you name it. Always works well; always tastes great.

Baked Penne with Italian Sausage

I really like to cook this dish. I use Italian Sausage links sliced (into coins) and follow the rest of the recipe as indicated. It's great, easy and works well any night of the week and for company.

Italian Meatball Sandwich Casserole

I've made this lots of times, and it usually is a hit. It's a very heavy meal but tastes just like a meatball sandwich. In my experience a lot of men like this. I will say that my husband and I liked it a lot and he always wanted me to make it earlier in our marriage, but now it's a bit much for us. I only make it maybe once a year now (and we aren't old - he turns 30 this month).

Alice Chicken

Delicious! This is a favorite and pretty easy, but not an "any night" kind of dish (at least for me). It's great for company, (especially if you know someone likes bacon like my husband and many men like him), but your house can really end up smelling like the broiler/bacon/chicken. That's why I rate this a special night meal - and be prepared for the "after-smell." I haven't tried baking it, so maybe that would help some.

Onion Dijon Crusted Catfish

My husband loves fish, so I tried this recipe for something different. It was really easy, used on-hand ingredients and really tasted good. I'm not a fish fan particularly, but I even ate the leftovers the next day for lunch. We'll definately make it again.

Baked Honey Mustard Chicken

This was so easy and tasty. My husband really liked it - he often says about meat dishes, "It's good but kind of low on flavor." BUT he thought this was really good. I used dijon mustard instead of regular. Although I only cooked 2 chicken breast, I scaled the recipe for 4 and had more than enough sauce. One other note - I always cut my chicken breast in half (so I had four smaller pieces of chicken). I followed the cooking times and temperatures and the chicken came out perfectly juicy and tender.

Brown Sugar Glazed Pork Chops

This is on my list of "great and easy dishes to serve to company." I like to use cubed pumpernickel and sourdough rolls to make the stuffing - it gives the dish a nice colorful touch. I've also found that by cubing the rolls into larger cubes, it helps keep the sogginess away.

Lemony Steamed Fish

This recipe was incredibly easy and tasty. It's a good way to make not-so-fabulous fish great. Since it's just to two of us so far, and we are often eating in a rush, this recipe helped me make a nice meal fast when I served it with rice and steamed veggies. I think I used Whiting filets.

BBQ Chicken Pizza

This was really a quick and easy recipie and my husband loved it. To make it a bit cheaper, we made a Bisquick pizza crust (1 1/2 cups Bisquick and 3/4 cup very hot water. Mix into dough then spread on pizza stone/pan). Just put the topping on the uncooked crust and bake it for 15 mintues.
