Roasted Fall Vegetables

I had something like this recently, but it had sweet potatoes instead of turnips and used garlic aioli instead of the oil and rosemary.

Honey Mustard Tofu

This would be great with some modifications. I think the tofu should be browned without dredging, and then taken out of the pan. Make the sauce, and then put the tofu back in. The addition of cauliflower would be more authentic.

Pork Sausage and Cabbage Pitas

Fast and Easy Tofu Lo-Mein

My daughter (who was very tofu skeptical) loves this. It's cheap, its easy, its fast. My only suggestion (if you have time) is to freeze and then thaw the tofu...alot of water will come off it and it will be more firm and meatlike.

Simple Spinach Lasagna

Everyone raved on this (not so for other veggie lasagne recipes I've tried). I didn't have enough spinach, so I used half spinach, half chopped frozen and defrosted brocolli. GREAT!

Baingan Bharta (Eggplant Curry)

This was delicious. I didn't have any ginger garlic paste or cumin seeds, so I 2 cloves of minced garlic, and ginger and cumin powders to taste. It was fine. I had a few mozzarella sticks banging around in my fridge. Cut 4 into cubes and added that. Served when they just started to soften. Delicious, and they added some oomph. I think it would have not been filling enough without.
