High Temperature Eye-of-Round Roast

This recipe takes a cheap cut of meat and makes it into a pretty spectacular dinner! My oven doesn't hold heat too well, so I have to intermittently switch between turning the heat off and turning it on to low a few times, but the meat comes out medium rare pretty much every time. Thanks!

Chicken Noodle Casserole I

Yummerz! I've made this twice, the first time I followed the recipe exactly, the only change I made was to add some homemade chicken stock to the cooking water for the chicken breasts and noodles. It got rave reviews and I brought home an empty cassarole dish. The second time, I already had chicken from the night before, so I used that, and cooked the noodles in half water, half chicken stock. I also added some frozen mixed vegetables. It was super delicious. Even my picky sons loved it.

Gourmet Sweet Potato Classic

I've been making these potatoes for years, and they never fail. These are by far the best sweet potatoes I've ever had. I hate marshmallow topping, and the pecans are the perfect topping for these potatoes. Every year I can tell how much people like it by the empty serving dish. I've started making these the night before. I put the topping on it the next day and bake, and they are perfect!

Grandman Pork Chops and Rice

Dang, son! This wasn't half bad! Actually it was pretty darn good! Pork chops were nice and juicy. I fudged it a little, since i didn't have any tomato soup I used a 15 oz can of tomato sauce. I also didn't have taco seasoning, so like another reviewer, I used about a half of a cup of salsa. I didn't add the second water towards the end. I also kept the rice separate and served the chops and sauce over the rice. Fairly quick and easy and yummy too. This one's a keeper!

"Zuccotto" Cupcakes

Daaaaaaang!! These were so delicious! I made them for a dinner at my mother in laws and everyone thought I bought them at a bakery. A few things, I left out the nuts because my sister in law doesn't like nuts in anything. I didn't have any white cake mix so I used yellow, which was fine, but I think I'll try white mix next time. I used fresh raspberries instead of frozen. The ganache is perfect. The filling is luscious, and the icing is incredible. All around a perfect cupcake!! Also, although it took a while for the cupcakes to come together, none of the individual steps were all that time consuming and were very easy. But you definitely need to plan ahead if you want to make these. But they are sooooo worth it.
